Molasses Spice Smoothie

Reviewed: Nov. 25, 2013
I have made this twice now and I like it better each time. First time I made it exactly as written, but for the ice. Second time I had no bananas so I subbed half an avocado, which also worked quite well, but gave it a muddier appearance. Taste wise there was no great difference. Thanks Linda!

Mom's Pumpkin Rolls

Reviewed: Nov. 25, 2013
I liked this recipe, but found the rolls to be a little too sweet for my taste. Next time I will reduce the sugar to 1/2 cup. Thank you, these will be great with our turkey dinner.

Greek Yogurt Parmesan Chicken

Reviewed: Nov. 22, 2013
I made a few alterations to accommodate what I had to work with. In place of the ranch dressing I used garlic powder, ground sage, ground rosemary and a pinch of thyme and I forgot to add the mustard, but honestly did not miss it. My biggest issue was trying to get the mixture to stay where I put it on the chicken even though I had blotted the surface with a paper towel. The final result was nice crisp, flavorful, moist chicken. Thank you!

Grilled Hanger Steak with a Roasted Shallot Port Demi Sauce and Grilled Garlic Green Beans

Reviewed: Nov. 20, 2013
The recipe for the meal is really good and the sauce is wonderful. I was very careful to cook my steak to only very rare and let it rest. It was still chewier than I prefer but the flavor was good. I think cooking even to medium rare might have been too tough to enjoy.

Sauteed Cabbage

Reviewed: Nov. 20, 2013
I used green cabbage since that was what I had. I sliced the cabbage in fine ribbons and sliced the onion in similar fashion. I like the flavor boost from the peppers

Gingered Acorn Squash

Reviewed: Nov. 16, 2013
This turned out great! I really liked the ginger nutmeg OJ combination flavor. The squash I had wasn't very meaty so that was a disappointment, but the flavor was good. Thanks for sharing.

Easy Oven-Fried Chicken

Reviewed: Nov. 16, 2013
I didn't see the need for shortening, butter and oil so I settled on butter only, but followed the rest of the recipe as written and was happy with the moist, flavorful chicken. Not quite the same as fried, but a good substitute.

Chocolate Avocado Pudding

Reviewed: Nov. 8, 2013
This was a pleasant surprise. I made half the recipe to try it and only used a scant 1/4 cup of turbando sugar in place of brown. We all liked it and my skeptic did not believe it contained avocado. I had never worked with coconut milk before so it was an education all around. Thanks!

Lemon Chicken Orzo Soup

Reviewed: Nov. 4, 2013
I came home feeling yucky and wanting soup. I had everything on hand except to orzo so I subbed ditalini. In half an hour I had a bowl of pure comfort and great taste. Renee, you nailed this one!

Uli's Onion Bacon Sauce

Reviewed: Nov. 4, 2013
I just couldn't bring myself to use all that butter, so I compromised. I cooked my bacon first, drained about half the drippings and then added 1/4 stick of butter. I also used a whole sweet onion, which yielded more like a cup and a half. The flavor and aroma are delightful! Thank you Uli!

Glazed Parsnips

Reviewed: Nov. 3, 2013
I love parsnips and doubt there is a bad way to prepare them, but the glaze on these enhances the flavor without being obtrusive. Stove top space was at a premium so I roasted them already cut for about 30 minutes at 400F and when cooked I added the butter and sugar to the hot pan, coating each piece, then added the teriyaki and stirred. I put it back in the oven for another 5 or 10 minutes, stirred again to be sure I got all the glaze I could and served. Very good! Thank you, Lett101

Crabby Horseradish Dip

Reviewed: Nov. 1, 2013
We loved this dip! It is warm and rich and very filling. I was surprised by all the reviews that said it was bland until I was giving the recipe to one of my guests. When I read chili sauce I made the leap and used Sriracha. My friend thought it meant ketchup like chili sauce. Given the choice, I'd stick with the Sriracha.

Oatmeal Rolls with Honey Butter

Reviewed: Nov. 1, 2013
I halved the recipe. The rolls I ended up with are really good, but I had to adjust the recipe to make it work. I used a stand mixer. So I proofed my yeast in the bowl and added the oatmeal mixture ( which required over half an hour to cool enough to not kill the yeast ) Just reading the recipe I knew there was too much sugar for our tastes, so I reduced that to 1/2 cup for half the recipe. After adding all the flour the dough was still far too wet and I lost track of how much more I had to add. The final result was worth it, yielding 15 generous size rolls with just the right degree of sweetness.

The Famous Seafood Seasoning Recipe

Reviewed: Nov. 1, 2013
This is close! I didn't have ground bay leaves so it ran some through my spice mill. Then the rest looked too coarse so I ran the whole thing through the spice mill. I'm thinking the flavors may blend a bit more after being stored together for a while.

Rum Raisin Brownies

Reviewed: Nov. 1, 2013
This is more cake than brownie. I omitted the nuts because I was unsure of allergies. I frosted them with Rum buttercream icing. Oh, my!

I added 1 1/2 tsp cocoa powder and used golden rum instead of extract and frosted rum rains in brownies. Huge success!

Lemon Lavender Avocado Loaf

Reviewed: Oct. 24, 2013
I made this for a directors meeting for a parish charity. Usually they each take a small serving, eat one or two bites and they're done. Not today! They were practically fighting over the last piece. I followed the recipe very closely. I did cut the sugar to 1 1/3 cup and used just one avocado which was just slightly more than 1 cup so I added 1/2 cup plain yogurt. It still was sweet enough and very moist. The lavender smelled great while baking and just imparted enough flavor so you knew it was there. I will make this again for sure.

GNOCCHI DI PATATE (Potatoe dumplings)

Reviewed: Oct. 22, 2013
This is so much easier than I expected. I did get more than 3 servings, more like 4 generous. I used the gnocchi for one of my Ambassador assignments and made it with Johnsonville mild sausage and pesto cream sauce with peas. This was a major hit here. Thank you Manella for another great recipe.

Creamy Pesto Gnocchi with Italian Sausage

Reviewed: Oct. 22, 2013
This was superb! I made my own gnocchi from another member's (Manella) personal recipe and my own pesto from the last of my basil plant. Once the gnocchi was cooked it went together in no time. I used red and yellow peppers and frozen baby peas. This will be made often this winter. Thank again, Johnsonville!

Easy Cheesy Hash Browns

Reviewed: Oct. 19, 2013
I omitted both the soup and corn flakes since I had neither on hand. I mixed the sour cream and cream cheese with milk to get the consistency I wanted. I seasoned the potatoes with salt and pepper, chili powder and a small shake of cayenne. It still seemed a bit bland for our taste so I used pepper jack cheese. Rich and satisfying and very easy to put together.
