Pumpkin Soup

Reviewed: Oct. 14, 2014
I used this recipe as a base for a Johnsonville makeover by adding crumbled JVILLE hot sausage. The heat and the creamy soup balance each other perfectly

Aunt Kathy's Irish Soda Bread

Reviewed: Oct. 11, 2014
This was quite a bit sweeter than I prefer, but it calls for twice the sugar in my usual recipe. The texture is nice and it doesn't crumble so I'm happy with it. Thanks for sharing!

Mexican Tortilla Breakfast Casserole

Reviewed: Oct. 10, 2014
This reminds me of something I ate for breakfast in Mexico. While I don't think it is too much work I can't see my family eating it for breakfast, mid day brunch or dinner is more likely. We had it this evening. I prepped everything earlier in the day and refrigerated it until ready to bake. It was very well received, even by a picky 4 yr old. Once again Johnsonville scores well in our house.

Iced Pumpkin Spice Cake

Reviewed: Oct. 6, 2014
I made half a recipe in a 9" square pan and regret not making the full size. This is really good, the flavors blend perfectly. I do suggest checking in several areas to be sure it is thoroughly baked. While the center was baked at 42 minutes the outer part needed an additional 7 minutes. I should have tented foil over the top to prevent it from darkening, but made the mistake of thinking it wouldn't need too much additional time. Perhaps using a lower rack would solve that problem. Whatever you need to do to make it work is worth it. I had never used the Pam Coconut Oil spray before and I must say I am now a fan. Thank you, we enjoyed this

McIntire's Lamb Stew

Reviewed: Oct. 5, 2014
I added 3 parsnips, chopped and a rounded tsp of rosemary and upped the thyme to a full tsp. The flavor of the whiskey, while not overly strong seemed to mask the flavor of the parsnips and herbs. IMO, adding Guinness would be better.

Chef John's Garlic and Ginger Bok Choy

Reviewed: Sep. 27, 2014
I love Bok Choy. I would leave out the soy sauce if I make it again. I thought it just made it too salty without any flavor boost. Maybe replace it with rice wine vinegar?

Very nice! The flavor is subtle. Next time I may add some toasted almonds to the topping. Thanks, Molly

Simple Grilled Cauliflower

Reviewed: Sep. 18, 2014
Sometimes the simplest recipes produce the best flavors. I think I have found my new favorite way to cook cauliflower. Thank, oceanic a!

Chocolate Zucchini Bread II

Reviewed: Sep. 13, 2014
My only change was to stir in raisins instead if chocolate chips. The flavor is quite nice, but I would have preferred a more moist texture. I baked mine 52 minutes at a slightly lower temperature. It is hard to cut cleanly with no crumbles. But the important thing is it does taste good. Thank you, Shanna

Minty Peach Chicken Salad

Reviewed: Sep. 5, 2014
This is delicious! I used Sriracha as my hot sauce and lime juice in place of lemon because I had no lemons. My son called it "lady food" and then proceeded to finish it. Thanks, this will become a summer staple.

Poached Chicken Breast

Reviewed: Sep. 5, 2014
Very nice! I used homemade stock, which was made with carrots, onion and celery so I just added the tomato paste, salt , bay leaf, and peppercorns. My chicken is moist and flavorful and the kitchen smelled great. Thanks, Ace!

Fennel and Potato Soup

Reviewed: Sep. 2, 2014
I thought the fennel flavor a bit overwhelming so I did an even balance of fennel to potatoes and used leeks in place of the spring onions. I used red potatoes and left the skin on, it makes an interesting texture. If you can make this ahead of time the flavors really benefit from refrigeration. I think my favorite thing about this soup is it is so versatile. Serve it warm or cold! It tastes good either way.

Blueberry and Peach Crisp

Reviewed: Aug. 29, 2014
I used fresh local peaches and blueberries, but the frozen would work well out of season. I did double the topping because it seemed skimpy as written. Very nice. Thanks, Meg&Mom!

Italian Sausage Gravy and Biscuits

Reviewed: Aug. 25, 2014
We loved this! I made brunch with this as the main dish. I made 2 very minor adjustments rubbed sage in place of fresh leaves and I made my own biscuits. The next time I make this, and I will for sure, I will dilute the sauce a bit with milk to cut the saltiness. This is inherent in the sauce and no reflection of Duboo's recipe. Very rich and decadent comfort food. Thanks!

Sassy Freezer Slaw

Reviewed: Aug. 25, 2014
Who knew you can freeze cole slaw? I just opened one of the containers I froze last week and was happy with the results. I only made half a recipe and started with a bag of cole slaw mix, followed the recipe as written. I tasted it several hours after I made it and it was good, a week plus later after freezing it is still good. The dressing is a bit sweet for my taste but the family thought it is fine. Thank you, Sassy!

Blueberry Cream Muffins

Reviewed: Aug. 21, 2014
I was skeptical when I saw how heavy the batter seemed, but I stuck with it and I am so glad I did. These muffins baked up light but moist with a beautiful crumb. I also had to restrain my impulse to ignore the method of preparation. Follow it - it works

Eggs and Spaghetti

Reviewed: Aug. 20, 2014
Genius idea! I did make a few tweaks. I used green onion and increased it to whatever one whole (green and white part) yields. I used white pepper because I think it has more flavor and I added freshly grated Parmesan. I also threw my rosemary in my spice grinder to eliminate those sharp leaves so I'm sure I used more than stated. I had homemade coleslaw as a side. Fast and very tasty. Thank you pkelley.

Stuffed Alfredo Baked Potatoes

Reviewed: Aug. 17, 2014
I went a slightly different route and used broccoli rabe instead of spinach. This is very rich and filling and I loved the slight bitterness of the greens with the lush sauce. Such a creative use of the ingredients. Thank you, TFR

Spicy Alfredo Chicken Bacon Taquitos

Reviewed: Aug. 16, 2014
WOW! Probably the best thing I ever ate for lunch. The only Chipolte sauce available here is canned and I find it has an off, metallic taste so I simply seasoned my chicken with chipotle powder that I bought fresh from the Farmers Market. I still got the kick and smokey flavor. Fabulous! We will absolutely have these again. Thank you Patty!

Easy Summer Gazpacho

Reviewed: Aug. 10, 2014
Well done, Renee! I love cold soups and this is a keeper.. I was feeding children as well as adults so I went easy with the hot sauce and allowed folks to add at the table if they chose. I made 8 servings to feed 3 adults and 3 kidlets thinking I would have some left for my lunch tomorrow. Wrong! Thanks.
