Mexican-Style Goulash

Really great and super easy! I did about 1 cup of elbow mac though. Definitely a good, quick dinner for a night when you don't have a lot of time.

Double Tomato Bruschetta

The recipe is to die for! Perfect for entertaining or a nice dinner at home. I advise to cut up the sun-dried tomatoes with some kitchen shears so they are spread evenly throughout the mixture. This is a #1 recipe in my book!

Chicken Pesto a la Lisa

Awesome! I added a about a 1/2 cup sun-dried tomatoes. I also add about 2 tbs. of milk to make it a little creamier. The recipe didn't call for onion, salt or pepper but I added a little of all of those too! :)

Very good! I would even add a little more apple concentrate to this. I had to bake mine more like 55 minutes, but maybe that's because it was in the fridge for almost 24 hours prior to baking.

Salmon Fillets with Creamy Dill

Very tasty and easy to make! For the dill, you only need to sprinkle it on the top so there is a thin, even layer over the fillet. I had a thinner fillet too, so it only took 30 minutes to bake.

Excellent! Loved the sour cream. I personally would add 1 more banana next time and a little flour to balance it out. Super moist and no dryness about this bread. Definitely a keeper!!

Baked Cherry Tomatoes with Garlic

Love it! I used a little minced garlic, Italian parsley, truffle oil, feta cheese, salt and pepper. I just took a little chuck of feta and stuffed it in every tomato. Very tasty!

Magic Peanut Butter Middles

Excellent cookie! I did add 2 TBS of sour cream, and I think it helped make the cookies softer. I mad the peanut butter balls first and then put them in the fridge for my chilling time. I only cooked for 7 minutes as well (over cooking can kill a cookie). Thanks for the recipe! A keeper in my book.

Cheesecake Brownies

So easy and super yummy! I would even like to add some raspberries to it and I think it would be even better. :) I agree with putting 1/2 the brownie batter in, then the cheesecake mixture, then the rest of the batter. It makes the zebra effect come out a lot better.

A+ and easy to make! Tip - Add a 1 tbsp. of lemon infused olive oil! If you don't have that, do 1 tbsp. EVOO with 1/2 tsp. of lemon juice. I also added 1/4 tsp. of sea salt.

Maple Salmon

Very easy & yummy! I'm usually not a huge salmon fan, but I really enjoyed this recipe. The marinade only takes a few minutes to mix up. I did put fish in a tin foil sack I made with 2 pieces of foil and then drizzled the marinade over it. Bake for 15-17 minutes, then broil for 5-6 minutes. A+ in my book!

Grilled Salmon I

We LOVED this recipe! It was super easy and fast. I did not marinade the salmon for 2 hours because I did not want the fish to get too soggy. I only let it sit for about 30 minutes and then basted some reserve marinade 1/2 through grilling. The fish does not need to be flipped on the grill. Skin side down for 6-8 minutes on medium high does it! Serve this with some grilled, lemon-garlic asparagus and you have a quick, tasty healthy meal!

This was very good! It's a fruit cake. Do not double the recipe though, rookie mistake by me. :) It affects the way the middle of the cake bakes. However, itwas very good! I would definitely make it again.

This recipe was really good! I used some wheat rotini to help cut down the calories. I sniped some green onions into the casserole. I also topped with a little cheddar cheese. Delicious and makes for great leftovers!

Perfect for a football party! The recipe should say these take about 30 to 35 minutes to bake so the bacon turns crispy. To keep warm, put in a crock pot uncovered.

Loved this recipe! Easy to make and it is a quick recipe! I will make this again and again. If you don't have fresh parsley, dried worked just fine. I'd only do 2 tsp. if it's dried vs. 4.
