Fruit Dip II

Reviewed: Oct. 30, 2009
This fruit dip is an A++ in my book! It is so yummy, easy and everyone loves it. I use strawberry cream cheese, marshmallow cream, 1/4 cup of whip cream and 1 tsp. of vanilla. I serve it with green apple slices and strawberries. Delicious!!!

Turkey-Cheese Macaroni Bake

Reviewed: Dec. 1, 2009
I think this casserol is a good idea for your leftover Thanksgiving turkey, however, do NOT put the casserol under the broiler for 5 minutes at the end. I only did it for 2 minutes and it burnt the top of the casserol. Make sure the broiler is on low and watch it while you have the casserol broiling. Otherwise, I thought the casserol was a little dry and could be a little creamier.

Brown Sugar Smokies

Reviewed: Jan. 17, 2010
Perfect for a football party! The recipe should say these take about 30 to 35 minutes to bake so the bacon turns crispy. To keep warm, put in a crock pot uncovered.

Chicken Tagine

Reviewed: Jan. 25, 2010
This was a good recipe if you are wanting to try something different! Beware of the eggplant getting a little mushy. I used baby carrots instead of large carrots and it seemed to be just fine, if that is what you have in your fridge. :) This is perfect with couscous on the side too!

South African Malvapoeding (Marshmallow Pudding)

Reviewed: Jan. 26, 2010
This was very good! It's a fruit cake. Do not double the recipe though, rookie mistake by me. :) It affects the way the middle of the cake bakes. However, itwas very good! I would definitely make it again.

Almond-Crusted Tilapia

Reviewed: Feb. 1, 2010
This recipe I give a B+. Be careful not to burn the almond/cheese mixture when you are cooking the fish. Keep an eye on it! :)

Baked Soy Lemon Chops

Reviewed: Feb. 10, 2010
Loved this recipe! Super easy and very tasty. If you are in a rush for dinner, the chops still have a great taste even if you don't marinade them for 1 hour. Just make sure to get basting them while they are in the oven. About every 10 minutes. I served this with sweet corn and sauteed green peppers with truffle oil. A+ for me!

Maple Salmon

Reviewed: Feb. 23, 2010
Very easy & yummy! I'm usually not a huge salmon fan, but I really enjoyed this recipe. The marinade only takes a few minutes to mix up. I did put fish in a tin foil sack I made with 2 pieces of foil and then drizzled the marinade over it. Bake for 15-17 minutes, then broil for 5-6 minutes. A+ in my book!

Cheesecake Brownies

Reviewed: Mar. 13, 2010
So easy and super yummy! I would even like to add some raspberries to it and I think it would be even better. :) I agree with putting 1/2 the brownie batter in, then the cheesecake mixture, then the rest of the batter. It makes the zebra effect come out a lot better.

Magic Peanut Butter Middles

Reviewed: Mar. 27, 2010
Excellent cookie! I did add 2 TBS of sour cream, and I think it helped make the cookies softer. I mad the peanut butter balls first and then put them in the fridge for my chilling time. I only cooked for 7 minutes as well (over cooking can kill a cookie). Thanks for the recipe! A keeper in my book.

Spicy Chicken Breasts

Reviewed: Apr. 8, 2010
I like spicy, so this recipe was a good, quick rub for grilled chicken! Just be a careful on how much rub you put on the chicken. That cayenne pepper can get pretty hot! :)

Chicken with Mushrooms, Prosciutto, and Cream Sauce

Reviewed: Apr. 27, 2010
I would have to say, definitely sauté the mushrooms versus baking them. They were a little dry. With out the sauce, the whole dish would've been dry. Make sure to use plenty of prosciutto too. I could've used more! The was a "B" in my book.

Mexican-Style Goulash

Really great and super easy! I did about 1 cup of elbow mac though. Definitely a good, quick dinner for a night when you don't have a lot of time.

Janet's Rich Banana Bread

Reviewed: Apr. 29, 2010
Excellent! Loved the sour cream. I personally would add 1 more banana next time and a little flour to balance it out. Super moist and no dryness about this bread. Definitely a keeper!!

Salmon Fillets with Creamy Dill

Reviewed: May 3, 2010
Very tasty and easy to make! For the dill, you only need to sprinkle it on the top so there is a thin, even layer over the fillet. I had a thinner fillet too, so it only took 30 minutes to bake.

Red Velvet Cupcakes

Reviewed: Jul. 5, 2010
I would recommend baking for only 18 minutes. Also, it needs to have 1 tsp. white vinegar or lemon juice and 1/2 cup shortening. Cut the flour down to 2 cups.

Party Punch II

I did not use the black tea. Everything was great, but I added fresh peaches, pineapple and raspberries to the recipe. Marinate the fruit overnight. I used Bacardi Peach Rum too. Delicious!!
