Pineapple Grilled Pork Chops

Reviewed: Jul. 22, 2013
I made a pineapple salsa to top the pork chops with and it was amazing! Very healthy too. I don't know if I would have liked the recipe as much without the salsa so that's why I gave it 4 stars. See my photo!

Marie's Easy Slow Cooker Pot Roast

Reviewed: Apr. 11, 2013
This is great and easy! I use 2-3 stalks of celery, 6+ carrots and baby golden potatoes (no peeling required) and it is fabulous!

Maria's Stuffed Chicken Breasts

Reviewed: Apr. 9, 2013
I would agree that you do not need all of the cheese mixture for the stuffing. A lot went to waste. You could almost cut it in half! I baked my chicken breasts for 50 minutes and they were a little dry. I would say bake 40-45 mins max. I put Parmesan cheese in the cheese mixture and on top as well. Gave it a little sharper flavor.

Spicy Avocado Chicken

Reviewed: Mar. 15, 2013
I altered their recipe a little. When I sauteed the chicken I put lime juice in the pan. Then, when there is only about 5 minutes left for the chicken to cook I put about 3 tbsp. of yellow onion in with the chicken to give it more flavor (and I didn't have red onion). After you remove the chicken from the pan top with the sauteed onions and sliced avocado, squeeze lime over the whole thing. Delicious!

Pecan Breaded Chicken Breasts

Reviewed: Feb. 20, 2013
I would have to agree with a lot of other reviews that it is very difficult to get the crust to stick. I ground my pecans down to be like small gravel and it didn't stick and ended up burning in the pan. Next time, I would definitely cook the chicken breasts in the oven for 25-30 minutes at 350 and then do the pecan crust in a pan afterwards.

Sherry Apple Pork Chops

Reviewed: Nov. 10, 2012
AWESOME fall recipe! The cinnamon hit the spot. I added gold and regular raisins and 2 cinnamon sticks to the baking pans. The raisins really added a great sweetness to the overall flavor. I didn't have sherry, so I used a bourbon and it was still really good! 10

Paprika Chicken with Mushrooms

Reviewed: Nov. 10, 2012
Very healthy and easy recipe! I added 2 cloves of garlic (add 1 if you aren't garlic lovers like us) and a little dried parsley. It was great! Be careful not to overcook chicken though. I'd say 20 minutes is too long to cook the chicken. Next time I will brown both sides (3 minutes per side) and then add the mushrooms, onion and garlic.

Baked Dijon Salmon

Reviewed: May 23, 2012
Loved this recipe! Easy to make and it is a quick recipe! I will make this again and again. If you don't have fresh parsley, dried worked just fine. I'd only do 2 tsp. if it's dried vs. 4.

Sweet and Spicy Green Beans

Reviewed: Aug. 30, 2011
Loved this recipe! It was quick and really tasty. I added about 2 TBS. of yellow onion, 1 TBS. distilled white vinegar, 2 tsp. of chili flakes and 1/4 tsp. of white sugar. I didn't have the "garlic chili sauce" at home so that's where the vinegar, chili flakes & sugar came from. Definitely a keeper recipe!!

Italian Summer Squash Polenta Bake

Reviewed: Aug. 29, 2011
This dish was good and healthy! I used a 9x13 baking dish and I believe I should've used a casserole pan instead because the polenta did not cover the entire bottom of the pan. I also might recommend adding some sharp cheddar cheese to give this dish a little more flavor. I will definitely make it again!

Turkey Noodle Casserole

Reviewed: Jun. 28, 2011
This recipe was really good! I used some wheat rotini to help cut down the calories. I sniped some green onions into the casserole. I also topped with a little cheddar cheese. Delicious and makes for great leftovers!

Grilled Salmon I

Reviewed: Jun. 28, 2011
We LOVED this recipe! It was super easy and fast. I did not marinade the salmon for 2 hours because I did not want the fish to get too soggy. I only let it sit for about 30 minutes and then basted some reserve marinade 1/2 through grilling. The fish does not need to be flipped on the grill. Skin side down for 6-8 minutes on medium high does it! Serve this with some grilled, lemon-garlic asparagus and you have a quick, tasty healthy meal!

Baked Cherry Tomatoes with Garlic

Love it! I used a little minced garlic, Italian parsley, truffle oil, feta cheese, salt and pepper. I just took a little chuck of feta and stuffed it in every tomato. Very tasty!

Spinach Stuffed Chicken Breast

Reviewed: Dec. 29, 2010
5 stars for this one!! It was wonderful. I broiled on low for 15 minutes at the end because I like my bacon extra crispy. Tip from me is to add a little lemon juice on top of the breast before cooking. Then, before broiling put some shredded parmesan cheese. Delicious!!

Black Bean, Corn and Turkey Chili

This was a easy recipe when you are running short on time. Great on a cold night too! I suggest adding 2 Tbsp. of chives, it adds a color green to the dish.

Turkey Ragu with Fontina and Parmesan

Reviewed: Nov. 3, 2010
I sort of found this recipe to lack flavor. I ended up adding a little extra salt & pepper. Maybe fresh basil would be better than dried? This is also the first time I used ground turkey, so that could have something to do with it.

Roasted Rack of Lamb

I also added a little fresh orange juice and peel to this recipe! 1/2 tsp. orange peel and I rubbed the meat with the juice before the bread crumbs. It added a little sweetness!

Artichoke Bruschetta

A+ and easy to make! Tip - Add a 1 tbsp. of lemon infused olive oil! If you don't have that, do 1 tbsp. EVOO with 1/2 tsp. of lemon juice. I also added 1/4 tsp. of sea salt.

Double Tomato Bruschetta

Reviewed: Oct. 11, 2010
The recipe is to die for! Perfect for entertaining or a nice dinner at home. I advise to cut up the sun-dried tomatoes with some kitchen shears so they are spread evenly throughout the mixture. This is a #1 recipe in my book!
