About this Cook
I am a Detroit native, a mother of 2 young boys and a wife to 1 husband. =) My husband and I juggle work, family life, and other committments. It is a joy =) The days are busy, yet I love (love!) to cook (and bake!) for my family and others. Baking sweets is one of my favorite ways to bless people.
My favorite things to cook
I love quick and easy recipes that taste as though I haven't made any short-cuts! I love wholesome recipes that are free from processed ingredients and preservatives. And if the recipe uses 'pantry' ingredients, that makes it a winner in my book! ;-)
My cooking tragedies
Once i was toasting bread in the oven (several slices), in the midst of getting ready for work and cleaning the house, etc etc. I forgot about the bread, but remembered when the smoke alarm went off! The bread was on fire, and I had to open the windows to air the house out. I was fanning a towel out the front door, when the smoke alarm went off again (more smoke) Just then I saw my new neighbors, smiling at me, while moving some things in next door! AH! What a sight I was. =)

Gluten Free Zucchini Bread
this is GREAT!!! I made 2 loaves. The kids LOVE it and it made the house smell great while it was baking. My changes: I used 1 full cup rice flour (no sweet rice flour) I used 1/2 cup butter in place of the oil. I used ground flax seed in place of the xanthum gum. I left out the glaze, the kids love it without! I will definitely be making this again! I doubled the recipe and have 2 beautiful loaves. Oh and the crust really is beautiful. Thank you!

Fried Cornmeal Mush
I loved this, much better than grits! I sweetened with honey and brown sugar. I served it as a porridge, and followed the tip to stir the cornmeal into 1 cup cold water before adding it to the 2 cups of boiling water. Success! I then rolled the cooled mix into 'mush balls' and served it to my kids that way also.

Annie's Fruit Salsa and Cinnamon Chips
this is SO good! I had this at a friend's house, and my husband nearly ate the whole thing there. I was so excited when I saw this here! I've made this a few times now, and everyone who has tried it LOVES it! It is fool-proof. My husband would love it if I had this available every day! Thank you!
