Bacon Risotto

Yum!!! This risotto is absolutely amazing. I lived in Italy for three years and this recipe tastes completely authentic. I used cubed Pancetta instead of bacon and shallots instead of onions, doubled the Parmesan cheese, then added diced Roma tomatoes and frozen peas right before serving. It was so good that my husband and I both went back for seconds and then ate the remainder for lunch the next day! It took almost exactly 20 minutes to absorb all of the broth. It took a lot of stirring, but it was so worth it. Can't wait to make this again!

Downeast Maine Pumpkin Bread

One Word: Yum! I substituted 1/2 cup of applesauce for 1/2 cup of the vegetable oil, then added 1/2 cup of golden raisins and 1/2 cup of walnuts and this bread turned out amazing! It took about 10 minutes longer to cook than the recipe said, but it turned out perfectly! The recipe made three loaves, which was a little much for myself and my husband, so I wrapped up the other two and gave them to friends who couldn't stop raving about how amazing it was. I will DEFINITELY make this recipe again! It's perfect for cold autumn mornings.

Chicken and Stuffing Casserole

Very quick and easy. I added a little bit of celery for crunch and it turned out great. The leftovers put on french bread rolls made perfect Thanksgiving-style sandwiches! Will definitely make this one again!

Manicotti Italian Casserole

This recipe was A-W-E-S-O-M-E! I added a can of petite diced tomatoes, some crushed red pepper, basil, onion, and garlic salt to the beef mixture after browning, which added some great flavor to the spaghetti sauce. I also used the cubed pepperoni rather than the slices. My husband and I both loved it, but beware that it makes a TON of food. I ended up filling two baking dishes with one recipe's worth of ingredients, but it wasn't a big deal...we froze one so we can eat the rest in a couple of weeks! Fast, easy, and delicious.

Cha Cha's White Chicken Chili

This dish was simple, delicious, and healthy to boot. I substitued green chilis for the jalapenos and baked the chicken in the oven prior to shredding. With every single bite, my husband exclaimed how good it was. We both took the leftovers for lunch the next day and it was even better the second time around. Yum! I will definitely be making this again very soon.

Buffalo Chicken Dip

I made this dip for the first time last weekend and it is amazing! We had friends over and they finished the entire bowl in no time. I used low fat cream cheese and low fat ranch dressing...neither affected the taste or consistency in any way. I served it with celery and Triscuits, both of which paired with the dip quite nicely. Highly recommended!

To Die For Blueberry Muffins

I've been looking for a great blueberry muffin recipe and finally found it! The topping was the best part. Be careful not to fill the cups up past the top of the muffin pan or you'll have crumb topping all over the bottom of your oven.
