Stuffed Cabbage

A delicious and easy dish. The only thing I do differently is microwave the head of cabbage rather than freeze it. It works well and doesn't take as long as freezing and defrosting a whole cabbage. Just remove some of the core, stick the whole head in a bowl with a bit of water, cover it, then cook as you might a head of cauliflower. Depending on the size of the cabbage, it can take 8-10 minutes. I flipped it over halfway through. Let it cool & remove the leaves. I have also substituted ground turkey for the beef with great results.

Chocolate Zucchini Cake II

I love this recipe! I bake for a diabetic family member, so I adapted it to make it low-carb. It turned out great, even with the changes. I used Splenda granular in place of sugar, switched out 1 1/4 cup flour with 1 1/4 cup almond meal (or flaxseed meal or a blend of the two), increased baking soda to 1 1/2 tsp., and decreased choc. chips to 1/2 cup, but added 1/2 cup chopped walnuts, both mixed into the batter. I used a 9x9 in. pan, as the amount of batter is always less with Splenda, and baked for 25-30 min. The original recipe is delicious, and still quite tasty with the low-carb revisions. Plus, my family loves it. Thanks Sandi, for sharing this recipe!

Nutty Zucchini Bread

Good recipe, though a tad too sweet for my tastes. Just use a little less Splenda if you prefer it less sweet. I bake for a family member with diabetes, so have changed the recipe a bit to cut carbs and sugar. I use 3/4 cup whole wheat flour, and 3/4 cup almond meal or flaxseed meal. I also omit the applesauce, and add another egg or 2 egg whites.
