Crustless Spinach Quiche

Excellent and easy. Might try chopped broccoli next time as one reviewer suggested. Add whatever spices or extra flavors to suit individual tastes, but it makes a nice meatless dinner as well as a breakfast. Good with canned mushrooms and just about any kind of cheese. This will become one of my 'regulars'.

Nicole's Tailgate Party Chicken Salad

The addition of hard boiled eggs makes this an interesting chicken salad. This chicken salad works well as an appetizer dip/spread with sturdy crackers or as an entre because it is a great sandwich filling. I am a fan of seasoned mayo as my 'adhesive' of choice instead of Miracle Whip Pesto,dill, or roasted red pepper add a nice flavor to mayonaisse and both work well in this salad. I skipped the croutons and didn't miss them.

Jackie's Killer Krab Dip

As is, there is just too much 'dip' and not enough pizazz. Try 8 oz cream cheese, 5 chopped crab sticks (the more expensive 'real' crab is too bland) 1 tsp of granulated bouillon (chicken or beef),2 TBS. chopped GREEN onion,a dash of hot sauce and dash of worcestershire. Use half and half to thin if necessary. This is really good as a stuffing in small lengths of celery....no crackers or chips needed. My guests really like it.

Shrimp and Feta Cheese Pasta

This was tasty. Ingredient list did not seem correct. I used only half of the one pound of pasta that I boiled and almost tripled the olive oil, white wine, and used 4 tomatoes. Added some spices....of course everyone likes their own 'zing', but I always love to use Old Bay seasoning with shellfish. In the future, I would love to see just when these recipes first appeared on this website. I make an effort not to try the really new ones until there are some reviews and comments from others who have tried it.

Tartar Sauce I

This is really the best tartar sauce....but I skip the optional lemon juice and we squeeze fresh lemon on our fish instead...not everyone likes the lemony taste in tartar sauce. I have enhanced this with a TBS. of ketchup or cocktail sauce and a tsp. of dried dill. This makes a yummy sauce for boiled shrimp or seared scallops.

Pumpkin Cheesecake Bars

Wow..that might not help you select this recipe but it should. Easy enough to have these ingredients on hand in your cabinet. Use any type of cake mix. I really love the recipes that call for box mixes. These can be eaten with a fork and topped with cream, or eaten like a bar in your hand if it is cut into smaller pieces. Cool pumpkin filling that doesn't taste overly cheesecake-y. Very nice crust with enough sweetness so it doesn't taste like pastry dough. You will get rave reviews from your guests.

Turkey 'n Stuffing Bake

My husband and I really enjoyed this unique casserole. A little bit like chicken ala king over stuffing. Didn't have the fried onions, so I added chopped celery to the chicken mixture, some mushrooms cuz we love them, and after 30 minutes, I sprinkled shredded cheese on top and melted for 5 more minutes. We had 3 guests bring stuffing to our Thanksgiving dinner so we had so much left. Also used chopped chicken breast because we were out of leftover turkey.

Owen's Mozzarella and Tomato Salad

Ate some style of this salad daily when visiting Italy. Simplify even more by using fresh Roma tomatoes for the best flavor and basil infused EVOO...simply put some fresh leaves of basil into an empty salad dressing bottle, pour your favorite EVOO into the bottle and it will taste delicious within hours. A nice healthy summer salad.

Ham and Swiss Casserole

Husband and I really enjoyed this recipe. The egg/milk combo added a nice texture and variation on the traditional 'noodles with meat and cheese' casserole. Made it exactly as the recipe directed and probably wouldn't change anything.

Six Can Chicken Tortilla Soup

Had to agree with a previous reviewer that this soup had an odd color...almost gray. I carefully drained the black beans hoping to avoid the unappetizing color but I expected more of a chickeny, healthy yellow color. Used Rotel tomotoes with chilis as they add a nice kick. I think the canned chicken resulted in an unusual smell. Would definitely not use canned meat again. I prepared this for a soup and salad buffet on Christmas Day. The Shrimp Bisque (The Soup Mix Gourmet) went over big but the Chicken Tortilla barely got a nod. Won't make it again.....wish I could have given a better review.

Chicken a la King III

This was delish. Very yummy, creamy sauce. Just wondering what would happen if I skipped the egg yolks. I hated wasting the whites, but I am not the Martha Stewart type who plans ahead and uses it to make lemon merengue or whatever. So they went down my drain. My favorite all purpose seasoning to use is McCormick's Season All instead of salt, pepper, and other dried spices too numerous to mention. It added the right kick to this dish. I served this over some tube type bake and serve biscuits....you know the brand... and hubby and I liked it a lot and I will prepare it again. Thanx Joan!

Beefy Cheese Dip

Great dip for a large group.....not sure how to keep it fluid without frequent stirring. My only question is what kind of 'sausage' does everyone use to prepare this? Ground Italian? Sausage pieces in casings? Spicy chorizo with casings removed? This ingredient is too vague for me to rate this recipe more than three stars.

Mexican Egg Rolls

These were served to me recently when I lunched at a friend's home. Her filling included the ground beef nicely spiced with taco seasoning, but also included cooked rice, black beans, and the shredded cheese and diced green chilis. She mixed all of the ingredients into a large bowl and put a quarter cup of the mixture on each egg roll wrapper. This saved a little time so as not to top each egg roll individually with cheese and green chilies. The rest of the directions were identical although she sealed the edges with an egg wash and it was a great lunch accompanied with some chips and guacamole and a mixed greens salad.

Super Sloppy Joes

Outstanding. Too bad this doesn't come in a can! I added a quarter cup of barbecue sauce and a diced jalapeno pepper since my friends and family like a little more pizazz. We serve this whenever we host Green Bay Packer parties at our house. Never ever any leftovers.

Broiled Scallops

The scallops were really yummy and easy to make. Took longer to broil than I expected...maybe because I kept checking them to be sure they didn't get too brown. Treated my son and husband to this on day after Christmas and they said 'Bravo' so looks like I'll make them again.

Insalata Caprese II

Wonderful change of pace from normal lettuce salads. I shredded the cheese (used Queso Fresco Mexican white cheese instead of moz) and used 2 TBS. of red wine vinegar and 2 TBS. virgin olive oil for a little more tang. It's nice and quick, too.
