Simple Scones

The BEST scones I've ever tasted and worked GREAT in a food processor. I chose to sub dried cranberries for the raisins and add 2 TB grated lemon zest. YUM!! These were gone before they had a chance to cool! Also, for those out there aiming for whole foods, I subbed spelt flour for the full 2 cups of all-purpose and sucanat for the sugar and was VERY PLEASED. You honestly couldn't tell! (apart from the dough being darker in color) Still VERY moist and just as delicious as any bakery scone!

Chewy Cocoa Brownies

AWESOME!! And I only used 1 cup of sugar! Still PLENTY sweet and somewhat healthier. I also used half whole wheat flour. You'd never know. Makes me a feel a tad less guilty about clearing a third of the pan in one night.... These are hands-down the best homemade brownies I've ever made.

Honey-Peanut Butter Cookies

These turned out FABULOUS!! I used HALF of the sugar and substituted coconut oil for the shortening (much better for you) and they were the best, chewy peanut butter cookie I've ever made. Thanks for the recipe!!

Pumpkin Wheat Honey Muffins

I used the whole can of pumpkin (15 oz) because I hate having just a little of something left over that can't be used for anything else -and they turned out GREAT!! I figured, if you can substitute part applesauce for the oil, why not extra pumpkin? I'm glad it worked! From my research, both canola and vegetable oil are awful for you, so I used 1/4 cup of melted butter instead. The only other change I made was adding a bit more baking soda, so help with the extra pumpkin. I also followed others' advice by using cinnamon, ginger, and cloves (about 1/2 tsp of each -maybe more cinn.) instead of the pumpkin spice.

Whole Wheat Cut Out Cookies

Well, I can honestly say that I've been making cut out cookies since I was 10 and have never had such trouble! I was able to salvage these, however.... For some reason my dough was WAY too soft and sticky. (other reviewers didn't seem to have this problem?) The only cause I can think of is that my honey was raw and somewhat granular -though this has never posed a problem in baking before. I ended having to add over 2 cups of flour (yikes!) just to be able to roll it out. This of course diminished the taste considerably (I'm assuming), so I compensated by sprinkling with cinnamon. They turned out pretty good! My 2 year old definitely had no problem eating them. :) I would advise adding the honey a little at a time to see how much you need to reach the desired consistency. I will try this next time. :)

No Sugar Apple Pie

Wow! I'm impressed to find a "sugarless" recipe that doesn't use yucky sugar substitutes like Splenda! (dangerous!) This turned out great and is something that I don't feel guilty about feeding my family. Thanks for sharing!

Fresh Cherry Crisp

Very yummy!! I followed the advice of another reviewer and just took out the shortening completely (didn't sub anything for it), using only 1/2 c. butter and it turned out PERFECT. I can't imagine it needing another 1/2 cup of fat. It was very moist without.

Pumpkin Gingerbread

Wow! What a delicious bread!! So moist and spicy -excellent! The 3 cups of sugar and full cup of oil was too much for me, so I tried one and one-half cup of sugar plus a half cup of honey. I also reduced the oil to a half cup and added a half cup of applesauce. Turned out GREAT!! And I felt better feeding it to my family with less sugar/fat. :)

Apple Oatmeal Cookies II

These were good! I will say, though, margarine is AWFUL for you! I substituted with butter (fat, yes -but at least it's truly natural). Next time I'd like to try the applesauce suggestion.

Harvest Rice Dish

This recipe was awesome! Even my 18-month-old loved it! Very easy to make, even if it does take some time. It's not hard -just needs to be started enough in advance. So, no problem there. We didn't have any mushrooms on hand, so I just omitted them. Still turned out great. Superb with salmon and green beans! :)

Chocolate Chip Banana Muffins

Moist and yummy! Perfect for a snack during the day! I used 1/3 c. oil and 1/3 c. applesauce, WW pastry flour, about 3/4 c. walnuts, and an additional T. of cocoa. Frozen bananas -thawed- worked well (saved from the last time our bananas were going brown). I also baked them at 350 for about 20 min. It made more than I expected, so we made a dozen regular sized and 8 mini muffins. Excellent!
