I am in the field of public accounting and tax, however, my true passion has always been cooking and the culinary arts. It is what I do to free my mind from crazy numbers and audit clients! Being from the Mediterranean origin, food is a critical part of my life and culture – it is a binding mechanism that unites a family with friends and society as a whole.
My favorite things to cook
Being Croatian, Mediterranean cuisine is my favourite. Having said that, I love to cook dishes that have been inspired by that area, namely those having Greek, Italian and Spanish influences. My favourite dishes include homemade pastas and pizzas, spankopitas, rich ragus and meat sauces, as well as various breads and baked goods. However, having been exposed to the multicultural nature of Canada, I have also gained an interest in Asia and Indian cuisines. Since then, I have been trying to master the art of curry-making, pad-thai, and other Eastern world foods.
My favorite family cooking traditions
Ever y year my mum and I prepare an entire Christmas meal, which includes dozens of cookies, a number of made from scratch cakes, as well as a multitude of savoury mains and sides. Ironically enough, the entire process has little to with food... instead, it is mainly about spending quality bonding time between a mother and a daughter.
My cooking triumphs
I have mastered the art of making home made phyllo dough. It is a hard thing to handle, and I have tried at least ten times before mastering how to prevent the dough from ripping, drying out, etc... I can now get the dough paper thin and it's so much more delicous than anything that can be bought in the frozen food isle.
My cooking tragedies
My first attempt at making a cheesecake was an absolute disaster... I put the batter into a springform pan, and then into a water bath to cook in the oven. Unfortunately, I failed to notice that the springform pan was not correcly "locked" into place, and I soon discovered that my entire batter had leaked into the water bath, making a complete, and unsalvagable, mess... needless to say, I double check everything now :)

Downeast Maine Pumpkin Bread
This is an absolutely wonderful, dense loaf. It is actually my first time making pumpkin bread (after buying it at Starbucks and finding it absolutely addictive), and I am never looking for another recipe. The only changes I made were 1) I used half brown sugar and half white sugar, and 2) I added a hanful of roasted pecans to the batter (just because Starbucks does too :). I also used fresh pumpkin that I bought at the market (that I first roasted, then pureed and left in a cheesecloth overnight to drain) and it was delicious. I also tried the recipe today with Splenda and the entire amount of whole wheat flour, and although it was a little paler in colour and took a little less time to bake, it was wonderful. It was a great treat for my diabetic father. Thanks so much for the recipe!!
