Easy Chicken Taquitos

I hate boiled chicken so I baked mine with salt and pepper) in my oven for 30 min at 400. When it was finished, I cut into cubes and mixed it with the hot sauce, some cumin, and a few tablespoons of sour cream. To assemble the taquitos, I sprayed them with water and warmed each side on a heated pan. Based on other reviews, I spread some butter on top of the taquitos so the tops wouldn't get to hard. Next time I will add more seasoning, something else in the filling to make it less dry and maybe bake them longer at a lower temp so they aren't quite as crispy.

American French Onion Soup

This had a really good flavor to it. I didn't make it with the bread because I was already making grilled cheese for my son although I will have to try it the original way. I have never made french onion soup, I was glad for the easy instructions but it was a very time consuming recipe. Apparently this was the less time consuming version so I'm glad that I chose it.

Easy Meatloaf

This was an easy recipe that helped me use up some ingrediants before they went bad. The recipes that I use are usually much more complicated so I had to make myself follow the recipe as written. It reminded me of meatloaf that my mom made when I was a kid. I kind of wish that I had added some crackers in addition to the bread crums for more texture but it was good without them and it brought me back to when I was a kid.

Bacon 'N' Veggie Pasta

I hate to review this because I changed quite a few things on it. I didn't have mushrooms or broccoli, although I wish that I did, so I added frozen corn. I ended up adding tomatoe paste and water along with the stewed tomatoes because it got too dry for what I prefer. I don't normally add much salt but I think that I added more then it recommended. It seemed to need a little more kick. I added other dried spices along with the ones listed but I can't remember what they were. I didn't cook my pasta all of the way so that I could add it in with the sauce, which I did, I think that it helped the dish along. My whole family loved it. My son, who likes to pretend that he is a picky eater, snarfed it up then proceeded to tell me that it was ok.

Special Irish Beef Stew

I was freaking out a little because I hadn't planned anything for St Patrick's Day dinner and I decided to find a recipe today. FYI, you cannot make corned beef in a few hours if your beef isn't already corned. This recipe was a life saver and my husband loved it. My son didn't like it very much but he doesn't like very many things. The only changes that I made was I only used half of the beef, 1 cup of carrots and Leinenkugel Creamy Dark instead of the Guiness because the liquor store was out of it. I know that it is German instead of Irish but it really made it taste great. I was just ready the reviews that some other people left and they said that the beer made it taste bad, this beer is dark and has body but it isn't sharp in a bad way. I served it with a Soda Bread recipe that I found on her along with my German beer and it was great.

Irish Soda Farls

As far as farls go, this was a good one. JK, I have never had or made Soda Bread and this was really good. Bread is a little overwhelming to me but this wasn't. I took the advise of another reviewer and I crumbled two tbls of butter into the dry mixture then added the milk/lemon juice (I didn't have any butter milk). The only issue that I had was it looked like it wasnt going to finish in the center so I put a lid over it for a few minutes. We ate it with butter and honey, it was really good.

Fiesta Scrambled Eggs

I have been cooking eggs since I was young. I have made many omelets, fritatas, quiches, scrambled eggs with cheese, etc, but I have never made eggs that were like this before. It tasted similar to a fritata that I have made but it was so much easier to make. Nice flavor

Easy Polenta with Tomato Sauce

Well, this is very easy. I never buy polenta (I really haven't ever seen it in a grocery store) so I make my own using grown cornmeal. It works out but it's probably better with polenta. Anyway, I did put this under the broiler when I was almost done baking it. I lost track of time and left it in a couple of minutes too long and singed the cheese. Not the recipes falt, totally my error. Anyway, the taste was still good and it is something that I will probably play around with in the future.

Chicken Tostadas

I started to cut into the chicken and it smelled like it had turned so I made these without chicken. J also didn't use the tomato or the onion since I didn't have any. Without all of these ingredients, these were still really good. I can't try it again with all of the ingredients.

Yummy Honey Chicken Kabobs

These are very good. I have made them for a couple of years but haven't rated them until now. I have made them on a grill and on the stove top using a grill pan. I prefer the grill but they are good either way. I doubled the sauce but that was the only change that I made. Enjoy!

Good for You Greek Salad

OMG, this salad was so awesome. I made some pork chops with feta cheese and some other Greek flavors so I thought that I would give this salad a try. It was sooo delicious. There was some left over so I kept it and the next day the salad was even better. You should make this salad ASAP.

Lemon Rosemary Salmon

My husband and I do not like salmon, typically. I have tried all kinds of recipes and I have even ordered it in restaurants before (to see if it was me that was making it taste bad) but I haven't liked it. This made me change my mind about Salmon. Make this recipe ASAP!!

Tuscan Chicken Simmer

I really like this recipe. The first time that I made it, it was so good that my family almost fell out of their chairs. The second time I made it, it wasn't as good as we remembered it. I may have messed up somewhere when making it. It is a definate keeper, though.

Feta Cheese Turkey Burgers

These were so good and so easy to make. I do not make burgers with beef, only with turkey, which sometimes frustrates my husband. I was suprised that these burgers didn't have any eggs in the recipe and I almost added one to make them stick together, but I didn't. They actually stayed together really well (I guess because of the oil in the olives) and they were really moist. I don't give anything 5 stars but this is an exception to that rule.

Coriander Salmon

This was really fast to prepare and cook, which is the same for most fish recipes. My husband and I liked the taste of the salmon a lot, which we normally do not like salmon. The salmon that I used did not have the skin and I used lemon instead of lime juice. There was not enough of the hotsauce mixture to cover the salmon. I really loved the flavor and it went wonderfully with Leinenkugel's Summer Sandy beer.

Chicken with Peas and Quinoa

I prepair quinoa often but I have never prepaired it like this so I thought that I would try it. I soaked my quinoa ahead of time, which is a trick that I have learned and followed the directions as stated, with all of the ingredients that are listed. I changed the recipe to serve 4 people, but even then it made wayyy to much. I was surprised because this was pretty gross. My husband, who loves quinoa, wouldn't finish it. I was very dissapointed and I feel like it was a waste of time and a huge waste of ingredients.
