Easy Marinated Pork Tenderloin

Delicious! I used light sodium soy, and just one tablespoon of olive oil. Have tried this both in the oven and grilled, it's a great savory recipe. I just don't care for that much oil in my recipes. Have made this over and over, husband loves it too. We've even made it for guests on the grill. Very popular with everyone.

Crab Quiche I

For a bit of a lower fat version, I used fat-free cheddar and added only three rounded tablespoons of regular mayo. I also added a dived green pepper and half a tablespoon of red pepper flakes. And a third egg. Deeeelish! Contains basic flavors that you can't go wrong with, a good staple recipe. It took about 15 minutes longer in the over than stated but perhaps that's because of another egg?

Spicy Grilled Shrimp

I used smoked paprike for some extra zest. Easy and delicious recipe. Butterfly the shrimp for some extra-nice presentation. I sometimes substitute the grill with the broiler depending on the weather, it's tasty either way.

Smoked Salmon Pizza

This was delicious. We used Betty Crocker's Pizza Crust Mix on a 12-inch round cookie sheet and put the toppings on the uncooked dough except for the salmon (which was put in later to prevent overcooking). I would suggest more sundried tomatoes and a longer cooking time (we did 20 mins) for a crispier crust. We also use part-skim mozarella to keep it healthy-ish, and that woked out great

Pork Medallions with Balsamic Vinegar and Capers

Completely easy and tasty. Followed the recipe as written. Next time will make it with more sauce, but it was also really good the way it was written.
