Spicy Baked Cod Fillets

I very much enjoyed this recipe, this is a keeper for me. Best cod i have ever had. I could not find ginger paste at any of my local stores so i substituted ground ginger instead, but it still was excellent. One note, the recipe as written is very spicy. I used less than half of the cayenne pepper called for and it was still very spicy. I enjoyed it, but next time i will use even less cayenne pepper for my families sake.

Spaghetti Carbonara II

This was super easy, but tasted great! I added some italian sausage and reduced the amount of bacon. I also added some veggies to give it color (and some added taste). I added a red bell pepper, some mushrooms, and a can of italian flavor diced tomatoes (drained). I also added a little more wine and olive oil since I added some bulk to the recipe. It tasted even better then it looked. This is a keeper.

Mediterranean Baked Fish

Very yummy. I was not so sure how it was going to turn out, but this was really good. I did replace the olives with mushrooms and i did not have any rosemary, but still was very good. Definitely a keeper for when we have a fish night.

Chicken Tikka Masala

This was an excellent recipe. My son thought it tasted just like the Indian restaurant version. I appreciated his honesty ;-) I left out most of the salt as others have mentioned and i also left out the jalapeno peppers since my family still cannot take super spicy food yet. I also made extra sauce since i like extra with my rice, was super easy to do. Since i did not have a grill, i found broiling the chicken on skewers worked great and the chicken was very tender after marinating for several hours. I would highly recommend this recipe (with a few modifications to your own liking).

Honey Roasted Red Potatoes

These are a big hit with the family. Doubled the sauce and used olive oil instead of butter. I also replaced the dry mustard with ginger.
