Ground Chicken Taco Burgers

Reviewed: Jul. 12, 2012
We really liked this recipe. I put the jalapenos directly into the chicken mixture and I did add a bit of panko crumbs to firm it up a little. I cooked them on the stove in a little olive oil because we don't grill and they were beautiful.

White Wedding Cake

Reviewed: Jul. 12, 2011
I must admit I was a little worried about using this for my nephews wedding cake because of some of the really negative reviews. However, it is a wonderful cake - it holds up very well as the bottom tier of a 3 tiered cake - it was moist and had a lovely vanilla flavour. Because I was filling it with raspberry buttercream I left out the orange and almond extracts. The problem others have had may be because they didn't use CAKE flour as the recipe dictates. I doubled sifted it and as a result it had a very fine crumb. I reduced the yield to 50 and it was just right - made in an 11" X 3" pan.

GA Peach Pound Cake

Reviewed: Jul. 12, 2009
I enjoyed the cake but try using peach schnapps instead of the almond or vanilla flavouring for more peach flavour. I served this with a light custard and it was delicious.

Pretty Peach Soup

Reviewed: Jul. 2, 2009
Wow - what a great dessert - something a little different. I used a tablespoon of peach schnapps to snap it up a bit instead of the almond extract. It is creamy, not too sweet and the perfect end to a summer meal.

Peachy Ginger Soup

Reviewed: Jun. 20, 2009
I first tasted peach soup on a Holland America Cruise and the chef kindly gave me the recipe. Unfortunately it made enough for 60 people and I have had some trouble breaking it down. This recipe is similar except the HA recipe uses white wine, which is a little lighter I think.

Mexican Orzo Salad

Reviewed: Jun. 18, 2009
This is a great salad for a crowd because it makes a lot! I added a couple of diced jalapenos to give it a bit of a lift. I also squeezed a fresh lime over the salad just before serving - wonderful!
