Peanut Butter Chocolate Chip Cookies III
This is the first "by scratch" cookie recipe that I got that got a hearty thumbs up from my husband. I don't think he believes they are from scratch! I store them in a plastic container, and they stay soft as long as they're in there (3 days max. in this household). I didn't find that they were too cakey at all.

Bean Potato Enchiladas
This one was really a winner with myself and my husband. It has a nice presentation. I did not mash the potatos with a mixer. I just mixed in the beans, onions, and mix into the cooked cubed potatos with the olive oil and milk. It turned out really well and made preparation a little easier. I also skipped the salsa. I thought the enchilada sauce was sufficient. We dolloped sour cream on top. Will definitely make this one again. Excellent meatless meal.

No Bakes
This must be one of the easiest cookies to make, and it has been a family favorite in both my husband and my families for years and years. A lot of people complain that the cookies don't always set up well, but I found if you follow the advice in this recipe about bringing it to slow boil and not boiling for more than 90 seconds, I get perfect results every time. I use creamy instead of crunchy peanut butter.
