Pretzel Salad II

I made this for a pool party and was afraid that the jello part would spoil from the heat, but we kept it in the cooler until ready for desserts... Everyone loved it and asked for the recipe. I would in the future, use more butter in the pretzel mixture as mine did not stick that well.But it's delicious!

Broccoli Chicken Divan

I used to make this years ago and lost my recipe; but his one is a bit easier and very good! I doubled it and took it to a football/playoff party - it was a hit! I added some mustartd to the soup mixture (used cream of mushroom and cream of chicken) as well as some garam marsala spice - to taste. And I used mayonaise instead of milk for a thicker sauce. For the topping I crushed a mxture of Ritz crackers and French's Onions with the melted butter. Also added a lot more shreddded cheese. Very good!

Pumpkin Risotto

This recipe is absolutely delicious! It is however, time-consuming as risotto is - but well worth it for the excellent taste and texture. I used a bit more white wine than the recipe called for, and it had a nice finish to it. I will make this again; the parmesan cheese makes a wonderful topping.

Pumpkin Butter I

I will make this again, only next time I will have more of the appropriate jars on hand to store it in... Excellent taste and consistency. I didn't have all the spices, so I used Pumpkin Pie Spice - I think all of them were in it anyway. They will make nice holiday gifts for little cost.

Warm Sweet Onion Spread

I made this to take to a Football party -not sure if the guys would like it... as I ususally take a "meat type" of dip. But they loved it. It was gone in no time. I did, however, use low fat mayo and reduced fat swiss cheese -which did not affect the flavor or the consistency of the dip. I also added more salt/pepper and even some Lemon Pepper to it for some zip. I served Scoops instead of crackers for it. At least four other guests requested this recipe from me.

Downeast Maine Pumpkin Bread

This quick bread is absolutely delicious and easy! The texture is great, too. I added 1/2 cup chopped pecans to it before it went into the oven for some crunch (we are nut lovers). I also swapped out half the oil for applesauce and half the white sugar for the brown sugar/Splenda blend and the taste is still outstanding. I also put the mixture into two 9" x 5" pans for bigger loaves so they took 70 minutes to finish cooking. This will likely become a family favorite.

Cherry Tomato Corn Salad

I've used this recipe three times now, always with great results and praise! I've been adding a few things that I have in the kitchen to it to make it even more special. Last time I added sliced black olives and an avacado. The time before I cooked five slices of bacon in the oven crisply and crunched them into the salad... delicious!

Very Easy Shrimp Dip

Although thre taste is good, I made this for a buffet style party, but found that with the crackers, my guests were not getting to the cheese layer. So in the future I will either put the shrimp into the cream cheese or use a heartier cracker. I put a spoon in the dish, but noticed guests were using the crackers to scoop out the dip, thereby not getting to the cheesy layer.

Strawberry Cheese Pie

I thought this was a delicious pie! The almond extract gives it a nice flavor, as do the chopped almonds. I made it using pre-baked crusts,so it was very easy to make as well. The only things I did differently were: adding more cream cheese- and extra small box (I used lower fat version) and more whipping cream- 1.5 cups to make the pie fuller and denser. Lots more strawberries, and some extra whipped cream on top gave the pie rave reviews! A really nice, light summery dessert.

Michelle's Peanut Butter Marbled Brownies

I made these recently for a party; my husband thought it was not a "summer dessert", but I thought they sounded so good, I made them anyway. They were so well received! I added chopped walnuts - the brownies were moist and very delicious! I will make them again, summer or winter!
