Donna's Coconut Almond Cookies

Great new recipe to add to my holiday baking! I didn't flatten the cookies, but rather left them in balls (they flattened slightly in the oven). I did bake my closer to 14-15 minutes until they had a hint of golden brown on the edges. And, instead of a drizzle of chocolate on top, I put a Mound (get it? LOL) One cup of melted chips made way too much for just a drizzle - not a problem!

Easy Pumpkin Spice Latte

I used Monk Fruit sweetener to make it sugar free, and added a splash of vanilla. The only negative was that the spices do not dissolve and my last few sips were gritty. Other than that, it was a nice treat!

Taco Seasoning I

I love being able to control the salt since packaged taco seasoning has so much. It has a bit more authentic taste to it compared to the generic packaged stuff. One of these days I will make a big batch and store it, but until then I will just keep making it as is!

Creamy Frosting

No tips or tricks needed - frosting was great even with fat free milk. My only complaint is that it really wasn't enough for a two layer cake as stated, so I made a filling for the cake to make up the difference.

Baked Cream Cheese Appetizer

This is such an inexpensive, simple recipe, but it goes over so well every time I serve it! A friend called it "Poorman's Baked Brie", lol but let me say that there's always leftovers when I make baked brie, and with this baked cream cheese I have to make TWO!! I have shaped it like a bunny for Easter, a wreath for Christmas, or just a basic rectangle. Oh, and I do always add garlic powder.

Balsamic Brown Rice Salad

Good side dish... I skipped the celery and Splenda and served it warm. I also added a little salt & pepper, and used balsamic vinegar & olive oil in place of salad dressing.

A Twist on Pasta Salad

Great recipe! The only thing I added was fresh ground pepper. No one knew it was a healthier version of the typical pasta salad I make. I doubled the recipe for a 1 lb box of pasta.

Pasta Fruit Salad II

Ehh.. I thought it was so-so. It lacked a little something in the flavor department. I did use Orzo pasta in place of macaroni, and used sugar-free vanilla pudding and low fat whipped topping. I don't think though that if I had used regular products that it would have added much flavor. I like the idea of the salad, but will have to think of something that will add a little pizazz.

Italian Stuffed Chicken Breast

Very good! I substituted mozzarella cheese mixed with some finely shredded cheddar cheese for the Italian mix, but it still tasted great. The seasonings really gave it great flavor.

Springtime Pasta Salad

Ranch Burgers

I think this was the first time my mother-in-law ever complemented my cooking, lol. I did use dried Italian bread crumbs in place of the crackers (which is probably why they weren't salty like some mentioned). I'm not a fan of hamburgers, but these were great and everyone loved them.

Pork Chalupas

This is awesome! I've made it 4 times and everyone just loves it. I will admit that I have a shortcut and swap out the dried beans for canned beans. It reduces the cooking time, and there's no chance of the beans not being quite done. LOVE IT, LOVE IT!!!

Lemonade Pie III

This was an awesome pie loved by all! Thinking it might be too sweet after reading the other reviews, I did swap out the graham cracker crust for an easy baked crust of 1 cup flour, 2tbsp Splenda and 6 TBSP butter. It was perfect! Must be kept frozen, IMO. I will be making this again soon!!!

Pumpkin Chocolate Chip Cookies III

Yum! To make them a bit healthier I omitted the oil and added a banana (pumpkin is so strong, you couldn't taste the banana but they were still moist), replaced sugar with 1/2 C Splenda and 1/2 C brown sugar, and replaced half the flour with wheat. Perfect!!
