Corn Salad

Reviewed: Jul. 16, 2011
This is a very good and refreshing salad. I took suggestions of others and used cucumber and no celery. I also used 1 1/2 bags of steam fresh corn that was only cooked for about 3 minutes in micro. Just enough to take the frozen out of it. I also cooked 1 cup of minute rice in taco seasoning (about 2 teaspoons mixed in the 1 cup of water) and added that to the bowl. YUMMY!!! This would be great with a little cut up grilled chicken and some mozz cheese added. Maybe the next go around!

Tiramisu Cheesecake

Reviewed: Jan. 4, 2011
Very easy to do! I made it directly in a 9 x 13 glass dish sprayed with Pam - served out of the dish fine. Not a stron coffee flavor at all. Hardly any for that fact. The overall favor was more vanilla-like - mostly took on the vanilla wafer favor. Everyone at work raved and ate he whole thing. Very good and would make it again!!

Split Pea and Ham Soup I

Reviewed: May 1, 2010
Needs a little spices to taste, but the recipe turned out great. I doubled because I had more than enough left over ham.

Wow! Excellent. I did use the dry rub recipe submitted by another person. Everyone enjoyed them, and so did I. I am not a rib fan, but these were super!

Oatmeal Cookies Light

Reviewed: Apr. 21, 2009
Read some of the reviews and made additional modification, Used 1 cup 2 Tbsp butter, 1/2 cup regular applesauce, used 1/2 cup brown sugar, 1/4 white sugar (since applesauce was sweetened, 1/2 whole wheat flour, and 1/4 cup white flour, added 1 tsp cinnamon, and 1 tsp allspice, and one bag butterscotch morsels. YUM YUM!!!! and if your on weight watchers, each cookie calculates to 2 points each. They were crunchy on the outside and chewy inside. My perfect oatmeal cookie and my daughters and hubby loved them!
