Ground Beef and Sausage in Red Beans and Rice

This wasn't too bad. I used 1 lb of ground beef and 1 lb of ground sausage and made 3 cups of uncooked rice. I only added 1 can of black beans, some onions and 1 can of cream of onion soup with 1/2 can of milk. It was still a bit bland and hubby thought it was dry (it wasn't). So then I added some cumin and salt and it was delicious.

Lasagna Toss

Oh, my gosh, this was really, really good. I thought the cottage cheese wouldn't taste right, but it was great. It was a hit with the family, too. This is a great alternative to making actual lasagna, which we love but takes forever to make and store-bought just doesn't cut it. I will add a bit more sauce next time, maybe a can and a half. But other than that, it was perfect as it and super easy. Thank you.

London Broil for the Slow Cooker

This was great. I made it per the recipe and it was moist and tender and delicious. I did cut up some potatoes and added them about 3 hours before end time and that was okay. Next time, I'll serve it over wide egg noodles or rice, because it is like a stroganoff almost. The gravy came out perfect.

Cowboy Hash

This was great. I tweaked it and doubled it, so I used 2 lbs of ground beef, 1 can of Ranch Beans, 1 can of Black Beans, 2 cans of Sweet Corn and 2 cans of diced or stewed tomatoes. I added 1 tablespoon each of chili powder and cumin, some ground up garlic, salt and onion powder. Served it over rice and it was a big hit.

Juicy Peach Crisp

Beef Peach Pie

This recipe didn't sound very good but after reading some of the reviews, I decided to give it a try, plus I have a ton of fresh peaches. I had to use 2 lbs of ground beef because a 1 lb meatloaf is just not enough for my family. I ran out of breadcrumbs at 3/4 cup so I used enough French fried onions to make 1 cup and I used 1 cup of chopped sweet onions. I used fresh peaches sliced with the skin on and I doubled the sauce. It was really good. Hubby said it was okay, but my one son and I both loved it (my other son refuses to eat meat loaf, period). I will definitely make this again.

Peach Preserves

This was my first successful time making peach preserves. The other time I tried was disastrous because of having to skin them (no thanks). They came out really good and have a nice color. The recipe yielded 3 pints or 6 half pints. Instead of using 12 peaches (since the ones on our tree this year were tiny), I just kept pitting and cutting until I had like 7-8 cups of cut up peaches. I added 1/2 teaspoon of cinnamon to the recipe and call them Cinnamon Peach Preserves. I also used liquid pectin instead of dry. And I reduced the sugar to 4 cups and it's still plenty sweet. I gave a jar to my neighbor and she loves them. It's great to have something to do with all the peaches on our tree now. Both my boys love it.

Chicken Breasts in Caper Cream Sauce

This was really good. Even my picky hubby liked it. I cut the chicken up after it was cooked and mixed everything together with angel hair pasta. I didn't have whipping cream so I used milk. It was awesome!

Tangy Slow Cooker Pork Roast

OMG, This was sooooooo good. I used Vidalia onion and I didn't have any red wine vinegar so I used cider vinegar instead and I omitted the hot sauce. My kids & I loved it. Hubby added the hot sauce to his own & he was happy too. I don't normally like any roast cooked in the crock pot but this was really good. So now this is the only way I will cook my pork roasts.

Justin's Macaroni Salad

This wasn't bad at all. I used mayo instead of dressing. I used a chopper for the celery, onion & olives so they were tiny pieces instead of chunks and I had to add spices as it was somewhat bland. I added celery salt & celery seed with the salt & pepper. Next time I will NOT use the chopper and I will probably add cucumber & red pepper also. Thanks.

Sweet Potato Potato Salad

OMG this is sooooo good. I've made it twice now & the 2nd time I omitted the mustard. I used vidalia onion also instead of regular onion. What a hit! Hubby loves it & he's hard to please. My older son who gags on sweet potatoes loves it and my younger son who refuses to eat baked potatoes also loves it. I will never make regular potato salad again. Thank you for a killer dish.

Jerry's Wings

I was looking for a basic wing recipe and found this one. I had to cook them for more than 8 minutes though. I used honey bbq sauce for the kids & my wings & used bottled wing sauce for hubby. Everyone loved them. This will become a regular on our menu as we really love good wings & haven't been able to get really good wings where we live now. Next time I will cut the wing sauce with butter for the boys & I. Thanks.

Pinto Bean Chili

OMG This is too good! I'm not a big chili fan but this is really, really good. I've made it twice now and the 1st time, not so good (following the recipe) because the beans weren't soft enough. The 2nd time I soaked them overnight & made the chili the next morning & then put it in the crockpot on low so it would be ready when we got home. It was a big hit with everyone. I did omit the celery & didn't make the quesadillas to go with it. Hubby & the kids loved it.

Cheese's Baked Macaroni and Cheese

This was ok but wasn't very cheesy and I added extra cheese to it. Next time I will add a cheese like velveeta to help make it creamier and cheesier.

Pretty Chicken Marinade

This was a big winner with DH who doesn't really like to eat chicken. I used 1 oz. of lemon juice instead of 2 ozs. (1/4 cup). I didn't have liquid smoke so used browning & seasoning sauce instead and regular mustard in place of the spicy mustard. I grilled them in the George Foreman grill for about 5 minutes & they were tender, juicy & full of taste.

Amish Yumazuti

I made this as listed but used Wacky Mac (different sized/flavor noodle mix) and probably 1/2 to 1 cup of cheese instead of the egg noodles & 1/4 c cheese. My younger boys (5&9) & I loved it. I would probably double everything but the noodles next time because there were no leftovers and of course gotta have extra cheese.
