Made this for Super Bowl. Followed recipe exactly. Super yummy. I did use fat free cream cheese and light cool whip and skim milk. Still rich and good.

Chocolate Zucchini Muffins

Reviewed: Jul. 18, 2012
Trying to use up the bounty of zucchini and this one is a winner. I didn't have all the spices, so I increased the cinnamon and added a handful of cherry tomatoes with the eggs and oil and cut out about 1/4 cup of oil...shhhhh, don't tell! Hubby thinks they are super yummy!!!

Baked Omelet

Reviewed: Jan. 2, 2012
Made this for a group of 9 people for New Year's Day brunch. I doubled the recipe and baked it in a 9x13 dish. It was gobbled up and I got great compliments. Easy way to use up leftover Christmas ham. I followed the recipe as written (doubled).

Green Tomato Cake

Reviewed: Jul. 24, 2011
This is really good. I added white chocolate chips and about three times the cinnamon. Even my very skeptical hubby thought it was yummy.

Profiteroles

Reviewed: Jul. 2, 2011
This review is based on the ease of making these...they turned out lovely. I am serving them with the tops cut off and ice cream with chocolate sauce for the 4th of July. The recipe I used was for half this and it was supposed to make 50...no way. I got 26 and they are about like golf-ball size. UPDATE: these turned out to be kind of a let down...maybe it was just me, but I thought they were pretty bland and the ice cream was just as good without them.

Spinach Brownies

Reviewed: May 31, 2011
This is a very easy and yummy dish. I made it for a Memorial Day family gathering and it was just about totally consumed! I, too, wilted the spinach after cooking the onion in the butter rather than boiling it. Will make it again very soon...thank you for this delightful recipe.

Super good...skipped the 30 min. refrigeration and used water in place of sherry, canola oil in place of butter for browning.

Fixed this for dinner tonight and it was super yummy. Followed the directions as given....but only had dried mint on hand. Made the house smell good too!

Crazy Cake

Reviewed: Oct. 14, 2010
I have made this cake for many years for our family's Thanksgiving meal. It's known in our family as a Wacky Cake. I spread a jar of marshmallow cream over the top of the out-of-the-oven cake then when it is totally cool, add a semi-melted in the oven can of fudgy frosting...my hubby thinks it's terrific.
