Crustless Cheese Quiche

We did not care for this. The egg:cheese ration seems wrong. Turned out too fluffy, not enough filling. Might improve by adding some veggies or more cheese.

Sorry, but this did not work at all. The cheese stuck to the bottom of the pan rather than blending with the juices.

Stir Fried Asparagus

Followed previous posts suggestions and changed the butter to olive oil; sauted the chopped garlic for a bit; then added the cut up stalks (oops forgot the onion, was still good) and dumped in a lot of teriyaki sauce; sauted a few minutes then added the tender tops; continued to saute until tender; served over hot spaghetti topped with toasted almond slivers. My asparagus was not too fresh, but this still turned out yummy. (Remember to break off the tough bottom!)Five stars from me-an almost vegan. Non-veggies may call it a four.

Easy Fruit Cobbler Cake

Well, I had the ingredients, so I tried it. It really does work! As you might expect, it's a very sweet dessert. A bit too sweet for me, but I'm not a big dessert eater. It's a quick, easy, and adequate dessert for when you're in a hurry.

Butternut Squash Soup

Yum! I roasted the squash and scooped it out. Used sauted onion and garlic, also pepper and tumeric. Skipped the cream cheese. Don't want all that saturated fat! Pureed with chicken stock to desired consistency. Looking forward to squash season next year! I think I'll plant some just so I can make plenty of this soup!

Amazing Butternut Squash

If you don't like squash and are trying to disguise the taste, this does it. What a disappointment, though, for my squash-loving family. BLAH!
