Buttery Corn Bread

I have always made the recipe on the back of the corn meal box, but not this time. This corn bread recipe is superb. It is almost cake like, soft, moist and tender. I have saved this and will making this for years to come!:)

Coconut Macaroons III

I used to make the recipe on the back of the coconut package. Not anymore!!! These are grrreat! I took some semi-sweet chocolate chips melted them down and added a little vanilla and some sea salt to the top off these yummy cookies. Next year for x-mas I will be making a double batch.

Mama's Asian Chicken and Rice

I have been looking for a great orange chicken recipe and my search is over. Thise dish is super amazing. I took the advise of others and doubled the sauce recipe but kept the red pepper flake at a 1/2 teaspoon and for the cornstarch slurry I used 3 teaspoon cornstarch and 3 tablespoons water,came out perfect. Also since clemintines are in season I used them since that is what I had on hand.Super delish will be making again and again!!

Gnocchi I

These were amazing!!! I took the advise of others on this site and boiled the potatoes whole, let cool, and peeled. I used my food mill to rice the potatoes. To a pound of potatoes I needed 1 and 1/2 cups of flour. I got up and ate the leftovers in the middle of the night. Thanks for the simple recipe can't wait to mix and match sauces for these little bites of heaven.

Slider-Style Mini Burgers

I made these last night and they were really good. I followed the recipe to a "T". There weren't any leftovers. I suggest using the hawaiian snacker rolls they're not mini but hold more beef!From one Minnesota girl to the next THANKS!!

Greek Style Potatoes

These potatoes were great. I used 3 cubes of chicken base and added some oregano and fresh garlic to the liquid base. I would highly suggest using half of the water called for. I also had to cook for 2 and 1/2 hours and took the cover off the last 15 minutes. I wil definately make again!

Poor Man's Hamburger Steaks

They call this poor man's for a reason. I rated this 5 stars because I had to substitute the crackers for italian bread crumbs and only had 1 can of cream of mushroom soup in my pantry...I had not been MAJOR grocery shopping since before Christmas and this came out delis with what if anything I had. I followed the recipe to a "T",besides the bread crumbs and soup mix mix-up..lol,I also added a little onion powder to the mix. From one down home working woman to ... anybody, this is an easy great comfort food for everybody, especially this Southern Minnesota Family!8)

Slow Cooker Apple-Scented Venison Roast

I made this and was not impressed by the flavor. Thoght the meat was tender it was missing something even more than the salt and pepper I added to the roast.I will try again maybe I will add some grond clove and cidar vinegar.

Brown Rice

I needed something to make with the venison backstrapes I was grilling and this was easy and foolproof. I didn't have the soup or broth so used 1 cube of beef bouillon and a package of onion soup mix. I also saw some of the reviews about to much basil being used and I had some fresh parsley and button mushrooms that needed to be used up, so in they went.The dish needed to be baked for 90 minutes, but in the end it turned out really well.

Catfish Cakes

These are so good...I used 1 Tbsp of miracle whip and 1 Tbsp of sour cream in the mix, also I added fresh italian parsley about 2 Tbsp and half panko and half ritz crackers. This recipe goes on the monthly chart not just for x-mas!:)

Grandma's Polish Perogies

Better than Babcia's...This is a very yummy recipe. In the potatoe mix I added one large sauteed onion in 1 Tbsp of veg oil instead of onion salt and decreased the potatoes to 6. I also used Kraft melts- four cheese...It makes a good all-in-one substitute.Also when making perogies use a fork to make sure of a good seal of the dough.I strongly suggest after a 3 min boil to sautee the perogies until golden with added sauteed onions.

Spanish-Style Oxtail Stew

This city slicker turned country girl, I have never had oxtails. This recipe is very simple to make and folllow. I made a few changes.I didn't sautee all the veggies after the meat I just simply and everything to my crock pot. I also did not have chocolate so I used unsweeted cocoa powder, 3 Tbls to be exact. I left out the peppers(I didn't have any) and added mushrooms.This dish is so delis and unique.I served mine with whipped potates on top!!

Hamburger Steak with Onions and Gravy

Whoever doesn't give this 5 stars is crazy.This is crazy good and truely simple. We by our cow by the half, so I am always trying to find new recipes for ground beef.The meat is moist and very savory. This one is up on my top 5 recipes for ground beef!! Thanks!

Bacon Ranch Pea Salad

Super easy recipe. I made this into a paste salad. I added 1 pound of medium shells, 8oz. of crab meat and 1/4 cup of italian parsley. I also had to add a total of 1 and 1/4 cup of ranch. Really yummy for a quick lunch.

Chocolate Chocolate Chip Cookies I

These are so fabulous. I used half brown and half white sugar.I also used 1 1/2 c. semisweet chips and 1/2 peanut butter chips. These are a real treat. I will be making these instead of regular old chocolate chip cookies!!!:)
