Hashbrown Breakfast Bake

I offered spicy tomato bits along the side, rather than pico de gallo. Without the spicy tomatoes the kids loved it; and WITH the spicy tomatoes, the adults loved the bake.

Ham 'n' Cheese Egg Bake

This is my new favorite salad for the summer of 2012! I loved it . . . I sat down to have a bit for lunch and ended up eating the entire bowl. I love beans, so I was pretty sure I would like it, but the flavor is amazing. I think it might be the combination of eggs and relish along with the beans??? Regardless, this recipe is a keeper.

Grape and Feta Salad

This is a great salad, but 1 head of iceberg lettuce and 1 head of leaf lettuce is way too much. Just one head of lettuce is enough.

Buffalo Chicken Dip

I served this on Christmas eve for my daughter. She loves this appetizer. The only reason it does not get a five-star from me is that I prefer add grill chicken breast, rather than canned chicken.

Honey Brie Spread

7/30/11 Not too many people cared for this at our family get-together in Prior Lake, MN. I want to try the recipe again but with a thinner layer of brie. I like brie, but the recipe called for a thicker slab. I will also add honey with the cheese inside the bread. I will definitely try this again, as I think it has great possibilities.

Pesto Tuna Salad with Sun-Dried Tomatoes

I made this for a family get-together in Prior Lake, MN. If you like tuna salad sandwiches you will love this unique mixture. One comment was that it was a bit too oily, but that could be remedied by using water-packed tuna, rather than oil-packed tuna.

Tortellini Pesto Salad

I made this salad at a family get together in Prior Lake, MN. Everybody absolutely loved it. I liked pretty well, but not as much as everyone else. I had quite a few requests for the recipe. I will be making this salad again.

Fabulous Fruit Salad

Great fruit salad! I like the fact there is no sugar added and yet produces a sweet taste (no marshmallows). I used Greek yogurt, rather than regular nonfat lemon yogurt.
