Tempeh Mock Tuna Salad

I can't believe how good this is! I accidentally added a cup of veganaise and thought it had a great creamy texture. My husband, a tuna hater, loved this. Thanks for the recipe, it's a keeper!

Yellow Squash Casserole

Yummy! I did make a couple small changes... saw another recipie added 2 tbsp. pimentos, which really added a great flavor to this dish. Also did 1/2 yellow squash and 1/2 zucchini with excellent results. Used breadcrumbs instead of crackers because that's what I had. My husband LOVED this dish!

Homemade Mac and Cheese

Delicious! My husband was all over it and I added 3 strips of cooked turkey bacon to the breadcrumbs on top. I love that this recipie does not call for onions; they don't belong in mac & cheese!
