Garlicky Baked Butternut Squash

I made this for Christmas Eve dinner and there were no leftovers! I prepared everything the day before and put it all into two gallon size zip lock bags in the fridge. I turned the bags over periodically to sort of marinate everything. The only change I made was to add cut up leeks which are also wonderful when roasted. This dish was a big hit!

Delicious Ham and Potato Soup

This soup is absolutely declicious. I make a lot of soups and freeze them as quick lunches for my elderly mother. This one is a new favorite. The only changes I made were to use homemade chicken broth in place of the water and to add a leek which I sauteed first in butter with the onion and the celery, Absolutely delicious!

Salmon Chowder

Awesome! I made it with leftover baked salmon, homemade broth (made from leftover smoked cornish hens), and leftover french fries, sweet potato fries and carrots (waste not, want not!) and added the other ingredients as per the recipe. It came out very tasty and I will definitely be making it again. Very versatile recipe. Thanks!

Double Tomato Bruschetta

Awesome way to use up some of the bounty of tomatoes from the garden. I made up a batch of the filling and stored it in a container in my refrigerator. Anytime I wanted a little snack, I just sliced off a piece of French bread, toasted it lightly, added the topping and some cheese and then broiled it for a few minutes in my toaster/oven. Quick, easy, and delicious!

Whitechapel Shepherd's Pie

I've made it several times now as per the recipe and wouldn't change a thing! Very tasty! ETA. I've read several reviews that interpreted "prepared mashed potatoes" as boxed. I assumed it meant already prepared from scratch, which is what I did every time. :)

Colorful Vegetable Saute

This was very good! I didn't have any red cabbage, but the dish didn't seem to suffer for the lack of it. We served it over whole wheat rotini and provided spaghetti sauce and freshly grated Parmesan cheese for those in my family who also wanted to add that to the meal. It was a very tasty vegetarian meal!!!

Addictive Sweet Potato Burritos

These are fabulous! I used the modifications suggested by Toni below and used 1 can black beans, 1 can pinto beans and 1 cup frozen corn (thawed) as my bean mixture. I also reserved the water I boiled the sweet potatoes in and used 2 cups of the broth in place of the 2 cups of water. I could only find 8 inch tortillas so the recipe yielded about 20 burritos for me. Freeze the leftovers and 2 minutes in the microwave is the only thing between you and a tasty snack!

Chicken Pot Pie IX

This filling in this recipe is fabulous and a life saver for me! I've been looking for quick easy tasty meals I can make in advance that my 84 year old mother can just re-heat using a microwave. Periodically, I make up a batch of this filling and simmer it on the stove top until the vegetables are completely cooked. (The only change I make is to cook the chicken & vegetables in the chicken broth that is used later in the recipe instead of water.) I then put the filling in single serving containers that can be refrigerated or frozen and bake up a batch of the Pepperidge Farm Puff Pastry Shells. Mom just reheats the filling in the microwave and serves it over one or two of the pastry shells. She loves it!

Apple Pie by Grandma Ople

Excellent recipe! I added the cinnamon, nutmeg and vanilla as per some reviews and the flavor was absolutely delicious! Next time, I'll probably add the corn starch or tapioca to make the filling less runny. It was the first apple pie I ever made and it was a hit!
