Mexican Bean Salad
This makes an awesome tortilla chip dip. A friend made this for a church group dinner and it was fantastic. I am hooked.

Spinach-Stuffed Chicken
We didn't really care for the spinach filling. We love spinach in recipes, but the flavor and texture didn't meld well with us. This is only our preference, I won't be making it again.

Southwestern Fried Rice
Ah, it's okay. Easy and light so that makes it worth making again but not my favorite tex-mex dish.
