Tasty Spinach Treats

These are soooo good! I'm not a big fan of the nutmeg, though... I prefer to add just a touch along with some garlic salt. Also, you may use the fillo shells available in the frozen food section -- they're quick and tasty. The recipe fills about 45 fillo cups...

The Best Meatballs

The last time I made meatballs, they were too dry. Not this time! These were moist and delicious. The beef/pork/veal is a great combination. I used 93% lean beef, but after I bought it, I was afraid I should have gone with a higher fat content to prevent drying out. But no, they were perfect. I cooked them in a slow cooker for 10 hours in the sauce. Great with spaghetti and made yummy subs the next day!

Spring Strawberry Spinach Salad

Very good and easy to make -- my only complaint is that I think it call for too much oil -- the oil weighs down the spinach and takes away from the flavor... Enjoy!

Lobster Dip

Delicious! I used (4) chicken lobsters, tails and claws, rather than the canned meat. I served it with rounds of French bread, toasted on a cookie sheet for a few minutes in the oven. A big hit on Thanksgiving, and serving it cold kept the ovens free for the "real" dinner.

Marinated Pork Tenderloin

Mmmmm.... This was delicious! I prepared the marinade as directed, substituting fresh garleic and onions for the dried, but only had about 3 or 4 hours to let it sit. I baked it at 400 for about 45 minutes and it turned out perfect! The pork had a carmelized crust on it that I really liked, too. Mmm! I'll definitely be making this again.

Best Chocolate Chip Cookies

Grilled Potatoes and Onion

Sturdy Whipped Cream Frosting

The almond extract is overwhelming. If that's the taste you're going for, great, but it wasn't what I was hoping for. The texture is good, but not quite the sweet, tangy cream cheese frosting that I intended.

Deluxe Mashed Potatoes

Delicious! I made this recipe as written, except I substitued scallions for the chives. It was great for my dinner party -- I could make it ahead, then just throw it in the oven without thinking about it. I am bringing these potatoes to my sister's for Thanksgiving, but plan to use the crock pot to heat them.

Ginger Snaps II

Fabulous. People thought they came from a bakery. Like other reviewers, I doubled the spices, but kept true to the rest of the recipe. The cookies turned out chewy and delicious.

White Chocolate Raspberry Cheesecake

The raspberry sauce was wonderful. For the crust, I used my food processor to chop Oreos. I used an 8" pan so the cake would turn out a little thicker. It got rave reviews!
