Zucchini-Chocolate Chip Muffins

Mini-chips are a fantastic way of getting the chocolate flavor in there, but still allowing the zucchini flavor to present itself. My kids love these. I plan to double the batch and freeze half.

Perfect Mixed Greens

I might use less sugar next time. Very easy to make. Used a chicken bullion paste. Kids loved it. Used with mustard greens and beet green tops. Yummy!

Chicken and Sweet Potato Bake

After reading reviews here, I cooked the chicken separately in another pan (I used three legs) and added 1c apple juice to the other mixture. I cooked the chicken on 400 for 10 min, then reduced to 380 for the rest (35 min-ish). I added dried cranberries. My two sons and husband LOVED it. Nice, quick, and easy,

Angelyn's Marinade

I marinaded salmon and shrimp with this for about a half-hour and then grilled on my electric grill. I kept with the recommendations here, adding probably double the cilantro. It was delicious, although I would marinade longer next time.

Eggplant con Queso

Very, very good. I followed many of the recommendations here, and added a bit of my own. Carmelized some onions, added a half-can of shoe-peg corn to that... added this mixture to the toast (two slices ;) and then cheese... Both of my little boys ate it, no problem. Looking forward to leftovers!

Swiss Chard with Garbanzo Beans and Fresh Tomatoes

My boys love this meal. I used collards tonight; whatever greens I have work. In place of the shallot, I used a yellow onion. Oh, and you can TOTALLY put in a few more tomatoes ;) Fab idea, Syd!

California Grilled Veggie Sandwich

I used my electric grill for this and it came out WONDERFULLY. The feta didn't melt too much, but it was just fine once I slapped the veggies on the roll. We did not serve them open-faced (bread was thin enough) and I added mushrooms to the mix-- kinda surprised they weren't a part of it!

Mango Muffins

I love having something to do with a ripe mango! I cut the recipe in half, using currants instead of raisins and lemon instead of lime juice ('cause that's what I had around). I also used 1/4 c whole wheat flour, adding it to the 3/4 c white flour. I have four delicious 'large' muffins now to enjoy!

My kids absolutely love these. I've made them multiple times, now. Be creative-- cut out a triangle, put a bean on top, and call it Pac Man! A great way to use my seasonal sweet potatoes.

Eggplant and Zucchini Casserole

Incredible. Everyone loves it. I add more tomatoes and use whatever loaf of bread I have to make breadcrumbs with. Also, Colby Jack cheese. My one year old LOVES this, even reheated.
