Grandmother's Buttermilk Cornbread

Very good recipe all around. But I agree with others that have previously reviewed this recipe, if you prefer a less sweeter cornbread only use a third of the recommended amount of sugar. Otherwise I wouldn't change a thing.

Sturdy Whipped Cream Frosting

Good recipe as an alternative to cream cheese frosting especially if you are looking for a consistancy that is light and fluffy. The taste of the cream cheese does come through so I have used 1 cup of confectioners sugar in place of the 1/2 cup granulated sugar with better taste results. It works well with red velvet and carrot cakes and as a topping over cheesecakes. It is somewhat sturdier than whipped cream alone but I recommend the addition of 2Tbs piping gel if you plan on decorating the day before serving. It will hold up much better and for much longer.

Rainbow Cookies

Excellent recipe that I have used successfully for several years after first finding it here on this site. In fact, it was my search for such a recipe that led me to make AR the first place. I have had to customize it for the size of my baking pans over the years because I can never make enough of them. I have used milk chocolate chips and had better success without having the chocolate crack on me while cutting. No need to pre-cut as one reviewer had suggested unless you wish to turn these into some type of petit fours. Using and good sharp chefs knife will give you a better cut when slicing. I stick with the traditional apricot and raspberry jams (my preference). I certainly recommend this recipe to anyone. My family and friends can't get enough of them.

Unbelievable Fish Batter

This is without a doubt everything it claims to be. But I too recommend cutting back on the baking powder or it will indeed be bitter. I happen to be a fan of cornmeal in my batter so I substituted some in place of some and it was very tasty.

Very good recipe. However, if you're not a fan of nutmeg it would be a good idea to omit it altogether. I will make this again minus that particular seasoning. I did however add fresh oregano (dried is fine too) to my meat and it really enhanced the flavor.
