My favorite things to cook
I adore baking and I cook daily for my family for economic reasons. When I eventually do go to a restaurant, I usually end up going home and reinventing the meal I tasted because somehow I always find room for improvement. I have grown quite proficient at making "something out of nothing" which means that I can always make a meal with modest ingredients and add a lot of imagination.
My favorite family cooking traditions
I belong to several non-profit, charitable organizations and find myself donating homemade dishes and baked desserts for many of our events and fundraisers. See what happens when folks find out that you can cook? Nothing beats homemade and the extra effort is always appreciated. As far as traditions go... Christmas time is when my kitchen turns into a cookie factory. My family and friends have come to anticipate brightly colored and flavorful cookie trays each year. I have always made home baked birthday cakes for my family who are now completely spoiled and turn their noses up at anything store-bought. I have created a monster! HA! HA! I want them to enjoy something homemade with ingredients that I can control. It is truly a labor of love and I'll keep on doing it!

Grandmother's Buttermilk Cornbread
Very good recipe all around. But I agree with others that have previously reviewed this recipe, if you prefer a less sweeter cornbread only use a third of the recommended amount of sugar. Otherwise I wouldn't change a thing.

Sturdy Whipped Cream Frosting
Good recipe as an alternative to cream cheese frosting especially if you are looking for a consistancy that is light and fluffy. The taste of the cream cheese does come through so I have used 1 cup of confectioners sugar in place of the 1/2 cup granulated sugar with better taste results. It works well with red velvet and carrot cakes and as a topping over cheesecakes. It is somewhat sturdier than whipped cream alone but I recommend the addition of 2Tbs piping gel if you plan on decorating the day before serving. It will hold up much better and for much longer.

Rainbow Cookies
Excellent recipe that I have used successfully for several years after first finding it here on this site. In fact, it was my search for such a recipe that led me to make AR the first place. I have had to customize it for the size of my baking pans over the years because I can never make enough of them. I have used milk chocolate chips and had better success without having the chocolate crack on me while cutting. No need to pre-cut as one reviewer had suggested unless you wish to turn these into some type of petit fours. Using and good sharp chefs knife will give you a better cut when slicing. I stick with the traditional apricot and raspberry jams (my preference). I certainly recommend this recipe to anyone. My family and friends can't get enough of them.
