Meatball Nirvana

I actually haven't tried the original recipe; as I printed it out I chef-inspirationally modified the ingredients for a super tender and delicious meatball, and the result was 5-star. I used fattier 80/20 beef. Instead of the onion diced, I grated it on the small side of the grater for an extra fine texture. Instead of the garlic salt I used a large clove of fresh garlic, crushed (mince it and use kosher salt as an abrasive and the back of your knife to mash it into a paste). Instead of Italian seasoning I used 1 tsp. dry basil, 1 tsp. fresh thyme minced, 1 tsp. fresh rosemary minced, and 2 tsp. dry oregano. I kept the red pepper flakes, dash hot sauce (Frank's!), and Worc. sauce. Instead of the skim milk I used an egg. Kept the parm. cheese, and used plain bread crumbs instead of seasoned (because of the seasonings already in the meat). When I baked it I put the meatballs in a 9x13 baking dish and filled it with water about a third up the meatballs. This steams them at the same time and keeps everything super moist and tender. Doing it this way came out very good! Thanks for the great base recipe, I'll be making them like this again!

Chicken Fajita Melts

this recipe was great. the only thing i changed was i used wheat french bread, toasted it before assembly and used a whole bag of shredded cheese. they were very neat and easy to eat with your hands and very flavorful. very easy to make as well. will make this again.

Oatmeal Peanut Butter Cookies III

these are very good. the only thing i changed was for the filling i used regular milk instead of heavy cream, only i used a lot less than 2 1/2 cups (about a tbsp) and some granulated brown sugar along with the confectioner's to make it thick & creamy, and it was still delicious.

Peanut Butter Cup Cookies

these cookies are awesome. they come out perfectly. i used granulated brown sugar instead of regular only because my mom accidentally picked up the wrong thing, but they still came out perfect. i followed RETROGIRL35's advice (besides refrigerating the dough). the p.b. cups slide right in without any cracking. the only thing i would say is that they are more like cupcakes than cookies; they're not all that crispy or chewy like chocolate chip cookies, especially the bottoms, they're really cake-like. not that this is a bad thing.

Raspberry and Almond Shortbread Thumbprints

these were excellent! i followed reviewer MarcieJ's advice on keeping the cookies firmer and making them look like they do in the photo, and they come out wonderful. i only had one stick of butter left and had to mix it with a stick of margarine, but they still came out fine. i also used lemon juice in place of the almond extract, and strawberry jam instead of raspberry. if i made these again i would like to see how they are with all the original ingredients, but even how i made it they came out excellent.

Giant Crisp Chocolate Chip Cookies

in an attempt to make a softer, chewier cookie as opposed to the described crispy/hard cookie i followed another reviewer's advice and used 1¾ c. flour instead of 2, and baked for 13 minutes instead of 20. they get wonderfully thin and huge, and have a great buttery taste with crispy/chewy texture, but the crispier parts tasted like buttered popcorn at times. perhaps using less salt/unsalted butter as others have suggested would help. and they do get pretty crispy pretty fast, but cooking for less time and immediately storing them in a sealed container helps keep them chewier.

Butter Balls II

these are an excellent basic sugar cookie and extremely easy to make. wonderful light buttery flavor and texture. i didn't use pecans, but you can really do anything with this dough. i made a simple homemade frosting out of shortening, sugar, lemon juice and milk to put on top, then sprinkled with cookie decoration and they were great.

Raisin Honey Chews

i enjoyed these cookies a lot. soft & chewy on the inside and crispy on the outside with a nice buttery flavor. i didn't have oranges so i used 1/2 tsp. orange juice in place of the orange zest, and i didn't have raisins, but the cookies came out perfectly. i would love to make these again with raisins!
