Pesto Lasagna

Reviewed: Nov. 24, 2010
Yum! Great combonation of flavors. Made "lasagna roll-ups" instead of a pan of lasagna. Easier to make lasagna for two. Nixed the onion and spinach. Baked chicken breasts in oven smeared with pesto. Chopped. Used half ricotta half cottage cheese. Layered noodle, alfredo sauce, ricotta/cottage mixture, chicken, more pesto, sprinkle cheese, black pepper, roll up, top with more alfredo sauce, mozz & parm.

Mini Meatball Subs

Reviewed: May 20, 2010
I used my own meatball recipe, but this idea is great! I also made them before hand, baked for 15 min @ 350 to get them browned, and them put them in the crockpot on low for 6 hours with pasta sauce and they turned out great!!

American Potato Salad

Reviewed: May 20, 2010
I added a little mustard, about 1 cup mayo, added chopped pickle, bacon, and cheese. Next time I will leave out the green pepper, I didn't think it went well.

Lime Chicken Soft Tacos

Great! I put in slow cooker and then shredded. I used 1 lime and no oregano, regular onion, and some Rotel and a little chicken broth so it was super moist.

Yum! Used instant potatoes, corn instead of carrots, added worch. sauce, garlic, 2 tbsp ketchup, and gravy mixed with 1 cup water instead of beef broth. Easy to make ahead and then pop in oven later.

Picante Chicken Rice Burritos

Reviewed: Jun. 16, 2010
Very delicious! Changed it up a little bit, I put the chicken breasts in a crock pot with the chicken broth and spices and let cook all day then shredded. I cooked the rice according to the directions on the box, and just added the salsa into the broth mixture. I put refried beans down first, then the shredded chicken, a little rice, sprinkled cheese and more salsa, baked in oven.

Key Lime Pie VII

Reviewed: Jun. 20, 2010
Delicious! I made my own graham cracker crust from this web site. I used bottled lime juice, I can't find key limes in Iowa and I didn't really want to squeeze a bunch of regular ones. Fresh juice would be better, but bottled worked just fine! It still tasted delicious! My friends loved it.
