Cream Cheese Snowball Cookies

Reviewed: Dec. 14, 2009
So awesome! The only thing I would suggest is to refridgerate the 15 minutes before so they stay in the same shape. Also, I needed to cook mine for about 8-10 minutes; not 6. I keep them cold in the fridge and they are great snowballs to eat!

PBJ Cupcakes - Berry Cupcakes with Peanut Butter Frosting

Reviewed: Jun. 19, 2011
What a delicious cupcake! Very moist and soft. I didn't have strawberry extract so I just used vanilla. I found some delicious homemade strawberry jam at the farmer's market and used that instead of raspberry jam. Instead of beating the jam into the batter, I folded 1/4 cup in before placing into the cupcake pan. This way it it has streaks of jam running through. After baking, i took a knife and took a little hole out of the middle then I warmed up the other 1/4 cup of jam for 10 seconds in the microwave and filled each cupcake. My peanut butter frosting I used 1/2 cup butter, 1 1/4 cup peanut butter, 1 1/2 cup pwd sugar, and 3 tbsp of heavy whipping cream.

Mini Meatball Subs

Reviewed: May 20, 2010
I used my own meatball recipe, but this idea is great! I also made them before hand, baked for 15 min @ 350 to get them browned, and them put them in the crockpot on low for 6 hours with pasta sauce and they turned out great!!

Smokey Chipotle Meatloaf

Reviewed: May 27, 2010
Wow this was awesome! The flavor was great. I added about 1/2 cup of milk to my oats and 1 cup shredded cheese. This makes the meat mixture very wet, but very moist in the end. I baked in a muffin tin for 45 min. Cut up in slices and made meatloaf sandwiches with pepperjack cheese! It was great!

Cinnamon Rolls II

Reviewed: Dec. 26, 2010
Amazingly good! Halved the recipe and worked great. After in the stand mixer with hook attachment and kneading, let rest in a lightly oiled glass bowl for 2 hours. Then after rolling and cutting, placed in greased 9x13 and let sit out overnight to rise and then baked in the morning. Didn't have to put in refrigerator.

Creamy Chicken on Linguine

Reviewed: Nov. 28, 2010
Restaurant quality!! I used chicken broth instead of water. Used half and half, and used about 1/4 cup mixed with flour to thicken. Used two cloves garlic. Simmered onion and garlic with broth, then added half and half mixture.

Boston Cream Pie Minis

Reviewed: Jun. 24, 2010
Yum!!! I followed exactly, using french vanilla cake mix, fat free cool whip, and about 1/2 cup chocolate chips in place of 4 square of chocolate. I greased the muffin tin liberally with butter Pam spray and they came out very easily.

Frog Cupcakes

Reviewed: Jun. 20, 2010
Came out awesome! I made my own buttercream frosting and Colored Sugar recipe from this website. I cut the marshmallows in half, and then cut a the bottom of each eye so it would be flat and easily stay on the cupcake. Instead of sprinkling the sugar on top, I just dipped each cupcake in the sugar and the shoke some off for an even coat.

Chocolate Mocha Liqueur Cake I

Reviewed: Jan. 24, 2011
This cake is insanely good. Words can't describe how moist it was. I used dark chocolate cake mix, chocolate pudding mix, mixed in 2 tbsp instant coffee in with the 3/4 cup water, used about 1/3 cup Kahlua, no vodka, used one small container of applesauce and just 1/2 cup veggie oil and I didn't use the glaze. Instead, I used chocolate ganache with a tbsp of Kahlua mixed in. My fiance and our friends loved this cake for his birthday.

Luau Chicken Sandwiches

Reviewed: Jun. 3, 2010
The marinade didn't add much pineapple flavor. I didn't like the grilled pineapple on the sandwich, it seemed really mushy to me. Just not for me. Will not make again.

Grandpa's Classic Coney Sauce

Reviewed: Jun. 21, 2011
I halved the recipe and would be plenty for 6 dogs. I followed this recipe to a T but needs some tweaking. The sauce is too sweet for my taste. Going forward, I am going to eliminate the sugar all together. Instead of ketchup, I am going to use tomato sauce. It also needs some sort of spice component. Maybe red pepper flakes, chili powder, or paprika. I also added about 1/2 cup water to the meat while browning to get it fine.

Chocolate Cream Pie II

This was amazing filling! I used 4 egg yolks and dark chocolate cocoa powder. Used 2% milk and thickened up just fine after about 10 minutes. Alternately used a whisk and spatula to stir. Made into mini chocolate cream pies and topped with homemade whipped cream.

Pesto Lasagna

Reviewed: Nov. 24, 2010
Yum! Great combonation of flavors. Made "lasagna roll-ups" instead of a pan of lasagna. Easier to make lasagna for two. Nixed the onion and spinach. Baked chicken breasts in oven smeared with pesto. Chopped. Used half ricotta half cottage cheese. Layered noodle, alfredo sauce, ricotta/cottage mixture, chicken, more pesto, sprinkle cheese, black pepper, roll up, top with more alfredo sauce, mozz & parm.

Lemonade Pie III

Reviewed: Aug. 12, 2009
Yummy! I used rasberry lemonade concentrate, fat free cool whip and froze the pie instead of just chilling it. To make sure the pie doesn't get soupy, chill the condensed milk and make sure the concentrate is still frozen.
