Easy Hummus

Reviewed: Feb. 8, 2010
This was addicting. I followed exactly. I used a combination of extra virgin olive oil and reserved liquid to smooth the hummus out. I also added some salt and pepper. Served with homemade pita chips.

Peanut Butter and Jelly Sushi Rolls

Reviewed: Feb. 8, 2010
These were great. Very kid friendly. Something unexpected and different. Don't let them sit out long, because the bread starts to get dry and hard.

Chocolate Surprise Cupcakes

Reviewed: Feb. 3, 2010
I halved the recipe. Used cider vinegar and low fat cream cheese. I made them into mini muffins. I got about 20 out of them. Perfect for just the two of us.

Slow Cooker Tamale Pie

Reviewed: Feb. 3, 2010
Very good. I baked in oven at 350 for 30 min. Instead of using boxed corn bread, I used Golden Sweet Cornbread recipe from this site and just added cheese into it. For the meat mixture, I also added Hot Rotel, green pepper, onion, garlic.

Sugar Cookie Icing

Reviewed: Jan. 31, 2010
Very delicious. It took about 4 or so hours to dry. It was kind of runny. So when I tried to make fine lines around the edeges it crept off. Maybe I should adjust the consistency.

Homemade Black Bean Veggie Burgers

Reviewed: Jan. 14, 2010
The flavor of these were awesome. I added about 1/4 cup Hot Rotel tomatoes, strained. I also strained the onion, green pepper, garlic mixture to get all of the water out. I also added about 1/2 corn and a little bit of cilantro and doubled the bread crumbs. The texture was a mushy on the inside, I was hoping for more of a spongy texture I guess. I think maybe next time I might add some Stove Top Stuffing.

Baked Bar-be-Que Chicken

Reviewed: Jan. 12, 2010
The method for cooking the chicken really makes it moist. I used 2 boneless skinless chicken breasts and covered for 30 minutes, removed foil, added bbq, and baked for another 15 minutes. It was very delicious.

I made this into a 4 layer cake with rich chocolate frosting. I used oil ins tead of shortening and next time I will bake at 325 for two 9 inch rounds for about 35 min because otherwise the edges got a little darker and the middle was not done. It tasted great!

Lemon Meltaways

Reviewed: Dec. 20, 2009
I agree with other reviewers who say these were inedible. At first you taste lemon and it is good, then they do melt away in your mouth, but not in a good way. It leaves a chalky corn starch taste in your mouth. I followed the recipe exactly and I do not care for them at all.
