Cream Cheese Jalapeno Hamburgers

Great! I used low fat cream cheese and pickled jalepenos. I also added sautted onion and garlic, salt and pepper, and olive oil to the meat mixutre.

To Die For Blueberry Muffins

Amazingly good! I used buttermilk instead of milk. There was a lot left over streusel, so I would cut down on that mixture next time. I can't wait to make these again!

Pineapple Filling

I couldn't get it to thicken up and i was sitting there and stirring forever. not sure how long it was supposed to take. i ended up adding a little cornstarch and that helped.

Made them for a bake sale. I used boxed mix just because I had it on hand. I put them in a plastic cup and added M&Ms at the bottom. Very cute.

Black Bean and Rice Enchiladas

Wow this was awesome! I used enchilada sauce on the bottom of the pan, in place on the picante, and on top of the enchiladas. I probably only used about 1 cup of the rice, and I used chicken stock in place of water for the rice. I also added cheese ( 1/2 cheddar and 1/4 cup cream cheese) in the rice/bean mixture and a little cheddar on top. I used HOT Rotel tomatos so I didn't use any red pepper flakes because it was hot enough! There was a lot of filling left over after making 10 enchiladas, but it was great leftover the next day for lunch!

Southwestern Roasted Corn Salad

Whoa, this is amazingly good! I switched it up a bit to suite my taste. I didn't use the red pepper but used diced tomato instead and also added a jalepeno and avocado. I used about 1/3 of a red onion. I also used 2 cans of corn instead, but it was still awesome! I didn't have hot sauce so I used a little bit of cayenne pepper.

Awesome. I used all butter and halved the recipe for 12 cupcakes. I used 3 cups as the base for the sugar, so I used 1 1/2 cups for half of the recipe.

Jalapeno Chicken II

This was great. For two servings, I used one jalapeno cut in half. I roasted it before rolling it in the chicken with a little olive oil. I used a combination of cream cheese and cheddar cheese, and sealed up each end of the chicken with toothpicks to the cheese wouldn't melt out. I also dipped it in egg and bread crumbs, no bacon. Will make again.
