Wow this was awesome! I used enchilada sauce on the bottom of the pan, in place on the picante, and on top of the enchiladas. I probably only used about 1 cup of the rice, and I used chicken stock in place of water for the rice. I also added cheese ( 1/2 cheddar and 1/4 cup cream cheese) in the rice/bean mixture and a little cheddar on top. I used HOT Rotel tomatos so I didn't use any red pepper flakes because it was hot enough! There was a lot of filling left over after making 10 enchiladas, but it was great leftover the next day for lunch!
