Cream Cheese Cookie Cups

Reviewed: Jul. 27, 2010
So delicious! I used 3/4 cup sugar, but I would recommend making more filling because it didn't fill them completely full. I can't wait to experiment with different flavors.

Jalapeno Popper Cups

Reviewed: Jul. 21, 2010
Amazing! I used Tostino's Scoops and put the mixture into a ziploc bag and cut a tip off to easily pipe into the scoops, otherwise it would have been difficult/messy to spoon in there. I also added S&P and used microwave bacon and turned out great!

Springtime Poke Cupcakes

Reviewed: Jul. 5, 2010
Great! I used this idea for some patriotic poke cupcakes! I used fat free cool whip, but a 12 oz tub and piped it with a big ziploc bag with the corner cut off. Tasted like strawberry shortcake!

This was great! I added more cheese into the casserole as well as on top. I also added 1/2 cup sour cream and doubled the topping. Served over rice.

So delicious, most, and flavorful! I halved the recipe and put into a 9inch springform pan sprayed with non-stick spray and parchment on the bottom. Took about 35-40 minutes.

Boston Cream Pie Minis

Yum!!! I followed exactly, using french vanilla cake mix, fat free cool whip, and about 1/2 cup chocolate chips in place of 4 square of chocolate. I greased the muffin tin liberally with butter Pam spray and they came out very easily.

Stuffed Strawberries

Reviewed: Jun. 24, 2010
MMMM good!!! I used low fat cream cheese, vanilla instead of orange liqueur, and 3/4 cup conf. sugar. I got the top off, used a tiny 1/2 tsp to take some of the middle out and then cut the tip off just a little bit so it would stand.

Frog Cupcakes

Reviewed: Jun. 20, 2010
Came out awesome! I made my own buttercream frosting and Colored Sugar recipe from this website. I cut the marshmallows in half, and then cut a the bottom of each eye so it would be flat and easily stay on the cupcake. Instead of sprinkling the sugar on top, I just dipped each cupcake in the sugar and the shoke some off for an even coat.

Southwestern Egg Rolls

Reviewed: Jun. 20, 2010
Wow! Unbelievably good! No spinach in mine. Used cilantro instead of parsley. Made a couple vegetarian, just leaving out the chicken for my vegetarian friend. She still loved them! I sprayed with butter Pam and baked at 450 for 10 minutes, flipped and baked for 5 minutes on the other side.

Key Lime Pie VII

Reviewed: Jun. 20, 2010
Delicious! I made my own graham cracker crust from this web site. I used bottled lime juice, I can't find key limes in Iowa and I didn't really want to squeeze a bunch of regular ones. Fresh juice would be better, but bottled worked just fine! It still tasted delicious! My friends loved it.

Picante Chicken Rice Burritos

Reviewed: Jun. 16, 2010
Very delicious! Changed it up a little bit, I put the chicken breasts in a crock pot with the chicken broth and spices and let cook all day then shredded. I cooked the rice according to the directions on the box, and just added the salsa into the broth mixture. I put refried beans down first, then the shredded chicken, a little rice, sprinkled cheese and more salsa, baked in oven.
