Chocolate Cream Pie II

This was amazing filling! I used 4 egg yolks and dark chocolate cocoa powder. Used 2% milk and thickened up just fine after about 10 minutes. Alternately used a whisk and spatula to stir. Made into mini chocolate cream pies and topped with homemade whipped cream.

Too Much Chocolate Cake

So moist and delicious! I used 1/2 cup vegetable oil, 1/2 cup applesauce. I used fat free sour cream, dark chocolate cake mix, devil's food pudding mix, and mini chocolate chip. Baked as cupcakes @ 350 for 17 minutes. Made 30 cupcakes.

Chicken with Tomatillos and Poblanos

This combination of flavors was excellent! I didn't have Anaheim but added some serano peppers. I also added a little bit of Rotel into the sauce pan while simmering. I purred the pepper/tomatillo mixture. I kept the chicken in breasts, but pounded them to 1/4 inch thick. Poured some of the sauce over the chicken once browned and after simmering for 20 minutes covered, I added a little sour cream and extra chicken broth. Served with rice and some monterray jack cheese.

Basic Flaky Pie Crust

So flaky and good! I use half butter half shortening and doubled the recipe using 1/4 cup + 2 tbsp water as suggested by another reviewer. Used for empanadas!

Awesome brownies! I used 8 oz cream cheese, only 1/2 cup butter, 1 small container of applesauce, and dark chocolate cocoa powder. I couldn't stop eating these!

Cinnamon Rolls II

Amazingly good! Halved the recipe and worked great. After in the stand mixer with hook attachment and kneading, let rest in a lightly oiled glass bowl for 2 hours. Then after rolling and cutting, placed in greased 9x13 and let sit out overnight to rise and then baked in the morning. Didn't have to put in refrigerator.

I had to simmer much longer than 1 hour to get the meat tender. More like 2 hours. I also added garlic instead of garlic salt. Very good.

Fluffy Biscuits

First time making biscuits and I am so impressed with this recipe. Used half shortening half butter. I made it all in my food processor, but didn't over mix. Pulsed the flour shortening butter mixture and slowly poured in milk egg mixture until it came together. Don't double this recipe, it doesn't work! One of those times when doubling just does not work.

Fresh Salsa I

Wow this is restaurant quality! I used 3 cloves, 1/2 onion, pinch of sugar, Hot Rotel, juice of one lime, and a hand full of cilantro. This is super spicy, but that's exactly how I like my salsa! For those of you who like your mouth to burn, this recipe is for you! But I also used HOT Rotel, which kicked it up a noch.

Creamy Chicken on Linguine

Restaurant quality!! I used chicken broth instead of water. Used half and half, and used about 1/4 cup mixed with flour to thicken. Used two cloves garlic. Simmered onion and garlic with broth, then added half and half mixture.

Pesto Lasagna

Yum! Great combonation of flavors. Made "lasagna roll-ups" instead of a pan of lasagna. Easier to make lasagna for two. Nixed the onion and spinach. Baked chicken breasts in oven smeared with pesto. Chopped. Used half ricotta half cottage cheese. Layered noodle, alfredo sauce, ricotta/cottage mixture, chicken, more pesto, sprinkle cheese, black pepper, roll up, top with more alfredo sauce, mozz & parm.

Libby's® Pumpkin Cranberry Bread

Delicious pumpkin bread!!! I used 2 teaspoons pumpkin pie spice, 1 teaspoon cinnamon, 2 cups of white sugar, 3/4 cups brown sugar, 1/2 cup vegetable oil, 1/2 applesauce, fresh orange juice, and sweetened dried cranberries. Used pumpkin base to make into chocolate chip pumpkin bread, and is the best, moistest pumpkin bread ever!!!! Also added walnuts to pumpkin bread with cranberry.
