Reviewed: Aug. 4, 2009
Very good. Followed basic recipe and added some things of my own. Sub HOT Rotel instead of tomato.

No Bake Peanut Butter Pie

Reviewed: Aug. 3, 2009
Very good. I halved the recipe and it turned out great. I made my own whipping cream though (1 pint heavy whipping cream, 1 tsp vanilla, 1/4 cup sugar). I also took the suggestion of the nutter butter crust b/c I LOVE nutter butters. However, I thought it was too rich. I think a short bread crust would help balance out the peanut butter flavor.

Tomato Chicken Parmesan

Reviewed: Jul. 20, 2009
Best chicken parmeasn I have EVER made. Taste just like the one from Olive Garden! However, it is essential to pound out your chicken before! It makes the world of difference.

Easy White Chicken Enchiladas

Reviewed: Jul. 9, 2009
It tasted okay, but I thought it was a real heavy dish. I'm not sure what could be done to make it not so heavy.

Oatmeal Sandwich Cremes

Reviewed: Jun. 24, 2009
I used the substitution recipe for the self-rising flour exactly. The first batch of cookies came out really hard and crispy. The 2nd batch I baked @ 8 minutes and they came out a little softer, but still a little crispy. For these sandwiches, I think the cookie needs to be really soft. I didn't care for them, but my boyfriend really like it. The filling was good, very sweet; made a lot.

French Toast Casserole

Reviewed: Jun. 22, 2009
I followed the recipe exactly. It turned out how it should have, but I just felt the dish was really heavy and not the texture I care for when eating french toast. I will not make this again.

Ultimate Twice Baked Potatoes

Reviewed: Jun. 22, 2009
Delicious! Be sure to use baking potatoes and let cool a little longer than 10 minutes; otherwise, the skins are more likely to tear.

Crispy Baked Chicken

Reviewed: Jun. 11, 2009
Delicious! Followed ingredients exactly, but also added a little bit of shredded parmesean. I also baked on a cooling rack on top of a cookie sheet. This helped from the juices making the chicken soggy. But be sure to spray your cooling rack so the chicken doesn't stick. Very crispy and golden brown!

Enchilada Casserole III

Reviewed: Jun. 11, 2009
I used a can of enchilada sauce. I also added some diced tomatoes and green pepper to the meat mixture, as well as some taco seasoning. I also used 4 kinds of cheese: chipolte guda, cream cheese with jalenpeno and a little taco seasoning, a little bit of shredded cheddar, and a little bit of mozzerella. It was so creamy and good.

Followed recipe exactly. I made little pancakes, but next time I will make them bigger. They were very soft and tasty. I wish they fluffed up a little more.

Black Magic Cake

Reviewed: Jun. 8, 2009
Perfect chocolate cake. Made for my graduation party and everyone loved it. Followed recipe exactly. Paired with Creamy Chocolate Frosting and Chocolate Ganache. **Update** I also made with peanut buter frosting from this web site in a 2 layer cake. I didn't have buttermilk so I used 1 container of vanilla yogurt and cut back the vanilla extract to 1/2 tsp. Next time I need to let the cake cool longer before taking it out or use parchment paper because it stuck to the bottom of the pan pretty good even after grease & flouring it.

Chocolate Ganache

Reviewed: Jun. 8, 2009
Used it as a filling for a 9 inch layer cake. I used bitter-sweet and wish I would have used semi-sweet. For a filling, I let chill for two hours and then whipped with my hand mixer. I wanted a thin layer of filling, but this gave too much for a two layer cake. Maybe next time I will need to spread it between four layers. Also, once I put my cake in the fridge the filling got really hard, not creamy. Maybe because it shouldn't be refridgerated? I'm not sure. First time making.

Slow Cooker Chicken and Dumplings

Reviewed: Jun. 8, 2009
This was delicious! I never have had chicken and dumplings before, but this was great! Very easy. I only used one can of biscuits, and flattened each biscuit with my hand and then cut with a pizza roller one time horizontally and then three times vertically. I left the dough in for 1 hour 30 minutes and it was done. It could have been done at 1 hour though. I put it over mashed potatoes and was tasty and filling!

Lemon Pie Bars

Reviewed: Jun. 5, 2009
I did 1.5 times for the filling and regular amount of crust; glad I did. Taste was great for both brust and bars. However, the top of my bars got a weird texture on them. Like after I beat the mixture together there was a foam on top and it sort of stayed that way. I couldn't tell when I was eating them though. I am not sure if that is normal? Could be just me.
