Slow-Cooker Barbecue Ribs

WOW! I had to put this on for close to 10 hours (work!) and when I got home, these ribs were the most tender, delectable ribs ever!. I did the oven and sauce part the night before, put it together in the crockpot and then put in the fridge until morning. In the morning, all I had to do was drop the pot in the slow cooker. super easy. Might try this method with a store bought recipe of your choosing, if you need to get rid of bbq sauce. Even my brother-in-law loved the recipe so much he called to thank me for sending him a plate over. Will definitely be making again!

Grandma's Peach French Toast

I made this for Christmas brunch for my family. I do not like French toast, but this has converted me! I didn't have day old French bread, so I used regular white bread. Turned out deliciously. I enjoyed it even better as leftovers. (I've portioned out some and put in the freezer for a quick warm bfast on the go. Reheats in the microwave well.).

Delicious Ham and Potato Soup

Wow! Very good! The ham flavor was subtle but very creamy. Will definitely make again. Also may try without the ham to see if it makes a better version of my mother's!

Mini Apricot Cheesecakes

Delicious! I use both strawberry and apricot preserves. Taste wise, I prefer the apricot, but the presentation is so pretty with the two colors.

Super Squash

I was not a big fan. Tha flavor was good, but it was so heavy. After several bites, all I could taste was the mayo. I even used low fat cheese and mayo and it was still too heavy. Pass.

Quick Pumpkin Oatmeal

Follow recipe to the letter. But mine was super thick after 6 min. Nice flavor. Might make large batch and put in crockpot to cook overnight for an easy breakfast with company.

Candied Carrots

Used precut shoestring carrots and boiled for a few minutes (maybe 3 min?). This was a huge hit! For the first time ever, carrots were devoured. Will try next time with Splenda brown sugar.

Slider-Style Mini Burgers

Good. Very heavy. I halfed the recipe. It tasted similarly to White Castle Sliders, but not overwhelmingly so. Would be good for a group of kids bc. you can make quite a bit very easily. Minimal cleanup was a huge plus.

Shrimp Scampi Bake

Tried it and liked it. Very good. Sauce was thick b/c of mustard. Buddy said would like again. Served with Rotini noodles, which were good b/c picked up some sauce.

Lemon Cupcake with Blackberry Buttercream

This recipe was amazing. I did add 13 drops of blue food coloring to the icing to give it a more deep purple tint. I would highly recommend doing this -- it becomes the color of what you think blackberry icing would be. I made mini cupcakes and have eaten so many today it is sinful! On one, I accidentally dropped some crushed dried mint on the top--- took it up to 6 stars. May have to try a leaf of fresh mint under a blackberry for presentation! Do try-- its an amazing combination.
