Sun-Dried Tomato Basil Orzo

Reviewed: Jun. 19, 2009
This was quite good - I hesitate to give it 5 stars because it was a little on the bland side, but still tasted good. Wish I knew how to give it that extra something it needs - maybe I will try lemon juice next time. I used 3cups of orzo and doubled the tomatoes & basil. Also, served it cold the next day (did try it warm and it was much better cold)

Slow Cooker Chicken and Dumplings

Reviewed: Sep. 29, 2009
These were AWESOME! Made a few changes - used 1 can cream of chicken, 1 can cream of celery. Added carrots. Added salt, pepper, garlic powder. Only had time for the biscuits to cook 45 minutes, next time I will let them cook at least 1.5 hours.. Really, really easy and me and DH LOVED them. Definitely will add this to my dinner rotation.

Chicken Enchiladas I

Reviewed: Oct. 14, 2009
These are the best chicken enchiladas - everytime I make them people LOVE them. The only things I do different is I make the chicken ahead of time by cooking a huge package of chicken in the crockpot with 1 jar of salsa (I usually 2x or 3x this recipe to make enough to freeze.. it freezes beautifully). Shred the chicken and then make the recipe. I also do NOT add the water.

It's Chili by George!!

Reviewed: Oct. 14, 2009
This is our favorite chili. Only change I made is I use 46oz crushed tomatoes instead of the tomato juice. Freezes very well.

These were just OK.. made them for my son's birthday party and no one really raved over them. I was disappointed given all the positive reviews! Won't be making these again..

Chicken Breasts with Balsamic Vinegar and Garlic

Reviewed: Oct. 19, 2009
We loved this. I added onions and omitted the flour. I'm not a huge fan of mushrooms so next time I'm going to try artichokes instead of mushrooms. Great recipe!

Slow-Cooker Chicken Tortilla Soup

Reviewed: Nov. 12, 2009
This was good - subbed crushed tomatoes for the whole, mashed but other than that I followed the recipe. Could use a little something more, not sure what. Overall a good soup though!

Herbed Pork Roast

Reviewed: Jan. 17, 2010
I made this tonight and it was EXCELLENT. I made a few minor changes.. I put the first seven ingredients (and added about 1tsp garlic powder & 1 tsp onion powder) in a bowl and mixed with olive oil to form a paste. I probably used 1/4c of olive oil. I cut 6 slits in my pork and put whole garlic cloves in. Rubbed the pork with the paste and let it sit in the fridge for about 2 hours. Wish I had time to let it sit longer! Next time I definitely will try for overnight. Cooked my 4lb boneless roast at 325 until it reached 158 (about 90 minutes) Removed from oven and tented with foil for about 15 minutes while potatoes finished cooked. It was excellent, everyone loved it!

Pan-Fried Asparagus

Reviewed: Apr. 26, 2010
This was excellent - as long as you either use 2 pounds of asparagus or less butter/oil. The ratio as it is is a bit much.. I added the garlic about 5 minutes after the asparagus was in so it wouldn't burn. VERY tasty dish!!
