Mrs. Sigg's Peanut Butter Cookies

I followed the recipe exactly and although they were good, I agree they were missing some peanut-butter flavor. Next time I will follow the suggestions and add more peanut butter. Still a tasty cookie tho!

Spinach and Tortellini Salad

This was very good.. I doubled the recipe to bring to a family party. I added about 3-4 roasted sweet red peppers and used 1 bag of baby spinach. I cooked the pasta and then added it to all the other ingredients (already mixed) and that wilted the uncooked spinach perfectly.

Barbequed Ribs

These were absolutely DELICIOUS!!! Only change I made was to rub the cooked garlic into the ribs before I put the rub on. Everyone raved about them.

Broccoli Slaw

This was VERY good. I used 15oz of dressing and 36oz of slaw mix and that was a good dressing/mix ratio. Added pistachios right before serving.

Baked Asparagus with Balsamic Butter Sauce

This was awesome. I used 1 TB balsamic vinegar instead of 1 tsp. Had leftover sauce in the bowl and poured it on my steak. It was outstanding!! I followed the advice of others and browned the butter. It made a huge difference and was incredible!!!!!

Ultimate Twice Baked Potatoes

Ricotta Gnocchi

I only made the gnocchi in this recipe, but it was very good. I had to use quite a bit more flour even though I drained my ricotta for about an hour ahead of time. Will try draining it longer next time. Hopefully then I'll need less flour and they will be a little 'lighter'. Definitely use half the amount of pepper!!

Pan-Fried Asparagus

This was excellent - as long as you either use 2 pounds of asparagus or less butter/oil. The ratio as it is is a bit much.. I added the garlic about 5 minutes after the asparagus was in so it wouldn't burn. VERY tasty dish!!

Herbed Pork Roast

I made this tonight and it was EXCELLENT. I made a few minor changes.. I put the first seven ingredients (and added about 1tsp garlic powder & 1 tsp onion powder) in a bowl and mixed with olive oil to form a paste. I probably used 1/4c of olive oil. I cut 6 slits in my pork and put whole garlic cloves in. Rubbed the pork with the paste and let it sit in the fridge for about 2 hours. Wish I had time to let it sit longer! Next time I definitely will try for overnight. Cooked my 4lb boneless roast at 325 until it reached 158 (about 90 minutes) Removed from oven and tented with foil for about 15 minutes while potatoes finished cooked. It was excellent, everyone loved it!

Slow-Cooker Chicken Tortilla Soup

This was good - subbed crushed tomatoes for the whole, mashed but other than that I followed the recipe. Could use a little something more, not sure what. Overall a good soup though!

Sour Cream Pork Chops

We LOVED this. Made a few minor changes per other reviews (added cream of mushroom to the bouillion/water and also sauteed the onions first).. This was OUTSTANDING!!!!!!!!!!!!
