Broccoli Cauliflower Casserole

I was going to make the French's green bean casserole but I didn't have French's onions so I tried this. This was a nice change and nice that most of the ingredients I had on hand. I did use 1 can of cream of mushroom soup instead of the mayo. It just sounded better. It was terrific. You can also use any topping like cornflakes and butter or French's onions if you don't have croutons. Hope you enjoy!

Brussels Sprouts in a Sherry Bacon Cream Sauce

I always thought brussel sprouts were awful and bitter. Cooking them the right way makes them so good. I didn't want to turn on my oven so I boiled them for about 6 minutes and then browned them, the mushrooms, onion and garlic in my bacon grease until they browned a bit. Add the cream and sherry. Turn off burner, cover with lid and let them sit for a bit to soak up the cream sauce. If you can wait, refrigerate overnight. These taste even better to me as a COLD SALAD.

Turkey and Quinoa Meatloaf

WOW!!!! This was delicious. I didn't have tomato paste, believe it or not, so I used 1/4 salsa verde. I didn't have hot sauce either. Also, I added a half cup of chopped red and yellow peppers for a wonderful flavor and color. I'm SURE the original recipe is just as good but I didn't have all the ingredients and then wanted to use up my peppers. I put it in a glass loaf pan and then turned it upside down onto a foil lined pan. That way it was easier to form into a loaf rather than doing it by hand. Enjoy!

Old School Mac n' Cheese

Very good recipe. I added bacon bits to give it a good flavor. Also, you can use american cheese slices. They melt up just fine as long as you melt only a few at a time. This makes two 9x13 dishes. It feeds a ton!

Orange Cream Cake

The cake was very good if you like orange creamsicles. I didn't like at first, tying it after I refrigerated it for 2 hours. It was too wet and almost mushy. The next morning it was just right after setting up a bit. It was moist and fluffy. So if you can, wait over night to eat it.

No Bake Cookies III

My favorite cookie ever! The key to the perfect texture (not too runny, not to dry) is after the mixture comes to a boil, reduce heat( but still keep it at a boil) and DO NOT STIR. Boil for 2 minutes and they will come out perfect!
