Stuffed Eggplant with Shrimp and Basil

I had shrimp and an eggplant to use for dinner... allrecipes to the rescue! I thought it tasted great, and once I got the eggplant scooped out, very easy! Next time I'll broil for a few minutes at the end to give it more of a crisp. Also no point in cutting the shrimp up too small, because then you can't tell what you're eating.

Fettuccine Alfredo V

Very tasty, and nice and thick. It really sticks to the noodles- yum! I used the regular Parmesan in the green bottle and it had trouble melting. I had to put my sauce back on the heat and stir it more to get the graininess out. Ditto on the sauce seeming very salty while I was cooking it, but with the noodles it was fine. We added spinach- I just poured the hot water and the noodles over the raw spinach in the strainer and it cooked enough. Real/ fresh parm next time!

My Best Clam Chowder

Too creamy for my taste. Even when I added milk, its flavor was too rich! But that's just me. The boyfriend loved it though!

The Best Vegetarian Chili in the World

There's a lot of veggies in here, highlighting the fact that this isn't regular meat chili. (Also means a lot of prep time chopping! But not necessarily contributing that much to flavor.) I thought it was ok, but it felt too "healthy" for my meat-itarian boy friend.

Seminary Muffins

My muffins went from "hearty" the morning after I baked them, to "tough and chewy" two days later. they also stuck to the muffin papers. I'll give them another shot, because the flavor was good, but maybe I'll us half apple sauce half butter or oil. Thanks for the recipe!

I love tuna sandwiches, but I didn't like this recipe. Not a fan of the sweet pickled relish, or the Parmesan-tuna combination. I'll stick to using real pickle, even though it's more work to chop up.

Lentil Soup

Great savory, easy, and healthy recipe! And room to customize! I went with several other recommendations to double the spices, and double the carrots. I had some fresh tomatoes that I chopped into medium pieces instead of using canned. You might find you like it more "soupy" and want to add a couple cups of water during the cooking process. And finally, instead of using balsamic vinegar, I used about half a can (about 3 oz) of tomato paste (not a huge fan of vinegar). Be sure to add salt after the beans have cooked! Followed another reviewer's lead and put some cut up spicy sausage in my BF's bowl. Served with some garlic bread to dunk with, delicious and healthy!!!

Ratatouille

I've never had ratatouille, but this is a great recipe! The flavor of this dish is like a loaded, delicious veggie pizza without the bread. All the flavors mix together really well. I recommend playing with the thickness you slice the veggies- having them all the same thickness will look aesthetic, but I think it's better to slice thinner the items that need to cook through more, like the zucchini, and leaving the tomatoes thicker. Mine does not come out looking like the default photo at all, but a lot juicer. In fact, I end up with a couple inches of delicious vegetable juices on the bottom of my dish, but I find it only adds to the flavor when served with the veggies. Veggie au jus! I'd imagine it being perfect as a side for a summer barbecue, but I dont' eat meat. Great as leftovers, filling, but light flavored enough to eat a big mound of it!

Eggplant Parmesan II

Yum Yum Yum! This recipe is easy and delicious! As a young student living on my own, I'll make a dish of this and eat the leftovers for days with no complaints! I like to have bread, or a small serving of pasta on the side to cut the flavor a little. Cheap, easy, vegetarian cheesy goodness!

To Die For Blueberry Muffins

My family thought they were great, but after reading all the reviews they did not meet my expectations. They came out drier than I expected, not really fluffy, or moist, either which would have been good. I will definitely give them another try to rule out human error.
