I've never had ratatouille, but this is a great recipe! The flavor of this dish is like a loaded, delicious veggie pizza without the bread. All the flavors mix together really well. I recommend playing with the thickness you slice the veggies- having them all the same thickness will look aesthetic, but I think it's better to slice thinner the items that need to cook through more, like the zucchini, and leaving the tomatoes thicker. Mine does not come out looking like the default photo at all, but a lot juicer. In fact, I end up with a couple inches of delicious vegetable juices on the bottom of my dish, but I find it only adds to the flavor when served with the veggies. Veggie au jus! I'd imagine it being perfect as a side for a summer barbecue, but I dont' eat meat. Great as leftovers, filling, but light flavored enough to eat a big mound of it!
