Grilled Marinated Salmon

Italian Wedding Soup I

This soup is awesome. I varied from the recipe a little, adding celery and baking the meatballs. I will definitely make this again although probably on a weekend - rolling the meatballs is very time consuming.

Easy Pizza Sauce III

This recipe lived up to it's name. It couldn't be any easier and it tasted great. I did add a little basil but the great thing about this recipe is you can add whatever you like to spice it up or keep it mild for the kiddies! This was plenty of sauce too. Enough for 2 decent sized pies.

Monterey Chicken with Potatoes

Although I did a few things differently, this turned out great! It was a hot day today so I tried it on the grill by using non-stick tin foil and making packets. I also did the potatoes in a separate packet than the chicken because it was just too much stuff in one packet. My husband loved it and my 3 yr old even at the chicken after I took the cheesy topping off:). I also added some Penszey's "Fajita" seasoning to both the chicken and the potatoes and used scallion rather than cilantro. We will be having this one again!

Lover's Beef Burgundy Filet

I made this for my husband and I for Valentine's day. It was a big hit! The only downside was that I didn't scale down the recipe for 2 and made a vat of the marinade (oops). I will definitely make this again, especially to impress the in-laws!

This is a great recipe. Fairly easy to make too. The sauce is a little runny, I suggest thickening it with flour or cornstarch.

Egg and Sausage Casserole

This is a great recipe. My guests loved it and we had plenty of leftovers for the next day. I've made it twice, the first time I overbaked after reading some other reviews. Today I followed the recipe exactly and it was perfect. I think I will try adding sauted mushrooms next time.

Breakfast Casserole II

This is an excellent dish. I baked it early in the AM and took it on the road with us in a covered casserole dish and wrapped in a towel. An hour later it was still steaming hot and although the cheese looked a little funny it was very tasty!

Favorite Banana Blueberry Quick Bread

Very tasty! My husband & I loved it, the 3 yr old wasn't crazy about it but I think he was expecting something different. I followed the recipe closely, but I used frozen berries (thawed & drained), walnuts instead of pecans, regular oats and a little fresh ground nutmeg. I will definetly make this one again!

Strawberry Rhubarb Pie

This was surprisingly easy to make. I am not a "baker" and I had no problems making the crust - there was just not enough of it to have a top & bottom. Next time I will double the crust recipe, better to have too much than too little. The filling was great. I served it to my husband and his parents who all are tough customers to please and they all liked it. Although my mother-in-law said she never had it before with tapioca as a thickener, she usually uses flour so the taste was a little different to her. I thought it tasted great and will definitely make it again! Thanks Deb!

Mom's Best Peanut Brittle

Easy to follow, and simple to make. Make sure you let the temperature get to 300 - it took longer than I thought (10-15 min. or so). Also, shaking the cookie sheet afterword side to side helps spread the candy without deflating it.

Kentucky Hot Brown

Yum! I haven't had this in years and was so happy to find it here. I did revise a little to make it how I was familiar with it. Instead of individual sandwiches I made it into a casserole by layering the bread, turkey, sauce, bacon, tomato, more sauce and finally some parmesean cheese. The bread was a little soggy so next time I will toast it more before and I didn't add mushrooms, I can't stand them. Oh yeah, I added about 1/2 c. of cheddar to the sauce as well. Thanks again for the recipe!

G's Flank Steak Marinade

Delicious! Everyone loved this one, even my 3 yr old had seconds. My only change was adding about 1 teaspoon dried rosemary and I left it in the fridge for 2 days, wow. For a 1.5 lb flank steak I grilled for 5 min each side for a nice medium rare. The edge pieces were done a little more for the kids.

Omelet in a Mug

Good and fast! I used only 1 egg and 1 minute was almost too much. I also made this into a sandwich so I only added salt & pepper to the egg before cooking it. When it was done I put a slice of american cheese on top, let it sit for a minute to melt, then put it on a toasted english muffin with a piece of honey ham. Wow! Better than the ones we used to slave over! My husband added herbs, onions and shredded cheese to his but wasn't too happy with it, he said it tasted funny, could have been the herbs though.

Mexican Chicken I

Wow was this good! I tweaked this a little: I had a half a packet of taco seasoning that need to get used up so I used that rather than the seasoning listed. That gave it a good flavor without being too spicy for the kids. I had 2 very large chicken breasts so I filleted them and that reduced the cooking time to about 1/2 hour. I also added a small cup of pineapple tidbits w/ a little of the juice. This was so good served with Vigo saffron rice, a little sour cream on top garnished with chopped green onions. My 6 yr old loved it but picked off the beans and my 3 year wouldn't touch it. The leftovers made a great lunch today!

Pizza On The Grill II

Great idea! We tried this the other night and were a little nervous but it turned out good. Make sure you have all of your prep work done, there is no time to waste after you flip the crust over. Also, slice your veggies small/thin. Our mushrooms didn't cook well & the crust was getting too dark to leave on any longer. Next time, I'll slice mine thinner and turn down the heat after flipping.
