Mom's Best Peanut Brittle

Reviewed: Jan. 12, 2003
Easy to follow, and simple to make. Make sure you let the temperature get to 300 - it took longer than I thought (10-15 min. or so). Also, shaking the cookie sheet afterword side to side helps spread the candy without deflating it.

Kentucky Hot Brown

Reviewed: Sep. 26, 2002
Yum! I haven't had this in years and was so happy to find it here. I did revise a little to make it how I was familiar with it. Instead of individual sandwiches I made it into a casserole by layering the bread, turkey, sauce, bacon, tomato, more sauce and finally some parmesean cheese. The bread was a little soggy so next time I will toast it more before and I didn't add mushrooms, I can't stand them. Oh yeah, I added about 1/2 c. of cheddar to the sauce as well. Thanks again for the recipe!

We used this over fresh tuna steaks, it was great! We'll definitely use this one again.

Champagne Chicken

Reviewed: Feb. 15, 2002
This didn't turn out as expected. I suggest not flouring the chicken before browning, it just got soggy when I added the champagne. I thought the flavor was a little bland but the husband liked it. Lastly, the cream never thickened. It was like milk poured over the chicken, yuk.

Orzo with Mushrooms and Walnuts

Reviewed: Feb. 15, 2002
This was a nice tasty dish to compliment the chicken I made. However it did take a lot longer for the orzo to absorb the liquid, about 40 minutes.

Deep Chocolate Raspberry Cake

Reviewed: Feb. 15, 2002
It ended up tasting ok, but a little dense. However, I almost burnt up my electric hand mixer trying to mix. I wouldn't attempt again w/o a stand up mixer. And, the instructions are a little lacking for those of us who are new to baking. I had a hard time with the egg whites.

Very easy and tasty. My husband loves the sweet stuff but I think I would like it a little spicier - maybe next time.

Egg and Sausage Casserole

Reviewed: Dec. 11, 2001
This is a great recipe. My guests loved it and we had plenty of leftovers for the next day. I've made it twice, the first time I overbaked after reading some other reviews. Today I followed the recipe exactly and it was perfect. I think I will try adding sauted mushrooms next time.

American Lasagna

This was a great recipe. All of my guests loved it. I ran out of meat sauce when I got to the top layer though so I may add a can of tomato sauce next time.

Chocolate Mice

Reviewed: Oct. 29, 2001
This was fun to make and my husband said they were tasty. One suggestion, line an old shoe box with tin foil and poke air holes in the top. Then, add some chocolate sprinkles to the floor of the box. Serve the mice in the box and it will look like they've been living there for awhile:).

Chicken Enchiladas I

Reviewed: Oct. 18, 2001
My husband and I really liked this recipe. As suggested by other reviewers, I excluded the water and added some cumin. The cumin really gives it the 'mexican' flavor. Also, if you decide to add hot sauce for a 'kick', be carefull which kind you use. I used some sauce we picked up in Jamaica and it totally changed the flavor:(.

Italian Wedding Soup I

Reviewed: Oct. 4, 2001
This soup is awesome. I varied from the recipe a little, adding celery and baking the meatballs. I will definitely make this again although probably on a weekend - rolling the meatballs is very time consuming.

Asian Beef with Snow Peas

Reviewed: Sep. 25, 2001
This had very little flavor and the meat was horribly tough. I basically followed the recipe except that I used sirloin thinking it would be more tender than round, not so.

Linguini with Broccoli and Red Peppers

This dish was kind of dry. I think it would be better with a light cream sauce.

The consistancy of this soup left much to be desired. It was almost gritty, yuk!

Good stuff. I only marinated for 3 hours and the flavor was good. I think I will marinate longer next time for more flavor.

Goulash

This is a very satisfying meal. I scaled it down for 4 ppl and it still made a ton. I altered the recipe a little: no mushrooms or peas, I cooked the garlic with the meat and didn't have any parsley so I added a little oregano instead.
