Roquefort Pear Salad

My husband hates any type of bleu cheese so I used feta instead. Otherwise followed the recipe exactly and it was fantastic. I could have used a tad bit less dressing, but that's my personal taste.

Chicken With Mushrooms

Im giving this 4 stars because I changed the recipe, if it was written as I made it, I would have def given 5! Went over tons of reviews and made the following changes: 1) sauteed mushrooms (i used baby bellas, yum yum) in 2 cloves of minced garlic and olive oil. 2) extra seasoned my bread crumbs, I only had plain ones on hand but even if I had seasoned ones I still would have added extra spices (i use an italian season grinder you can buy in the spice aisle, one of my best kitchen tools!) 3) added can of cream of mushroom soup with 2/3 cup chicken broth. I added the cheese at the last 10min of baking, then I turned oven off and left the dish in there for another 5 min to set up/thicken. Served over white rice, it was amazing!!!

Tomato Cucumber Salad II

My mom has made this recipe since I was a kid, only difference is no garlic, and adds fresh squeezed lemon juice. I will give the garlic a try! Also, I have always felt the longer the dressing has to marinate, the better the salad, sometimes we make this the night before for a better flavor.

Scallops with White Wine Sauce I

Patriotic Pasta

i just made this for a potluck im having tomorrow, and so far so good! i followed the recipe exact and it tastes great. I did make extra dressing just in case i need it tomorrow..but if i dont use it, i have great dipping sauce! Really good flavors.

Mexican Rice II

This is just about the same recipe my mom has been using my whole life and was passed down from her mother etc...only thing we do different is use fresh garlic and chicken boullion instead of broth...def gonna try the broth method now, thanks.

Italian Wedding Soup II

I really enjoyed this recipe. I did make changes, as we all do. Used spinach instead of escarole. Added orzo pasta (but tasted before adding and its really fine without). Added 1/2 an onion to the broth. Used fresh herbs instead of dried (i think this gives the 'wow' flavor you need) The egg & parm part was awesome! Also, I have read reviews about cooking the meatballs with the soup and cooking separate...i took advice from another review that stated if you cook the meatballs separate you really take away alot of flavor to the broth, i think she was def right about that...cook them in the broth! I had this soup for dinner last night, lunch today... and planning on eating again tonight for dinner! LOL

Easy Chicken Rice Casserole

I was very concerned about my rice ending up either too dry OR too mushy, so i cooked my rice seperate. I cooked the cut up chicken (seasoned with italian dressing seasoning packet) with 1 can cream of mushroom and 1 can cream of chicken, plus one cup of milk. Added some fresh mushrooms. Also added handful of cheese at the last 15 min of cooking. Poured the mixture over the rice, and it was awesome!

Green Chicken Enchilada

i'm giving 4 stars because i changed it a bit (of corse!)i think it would have been a bit bland for my taste if i hadn't. 1) i used corn tortillas, which i charred for a bit on open flame, for softness and flavor. 2)per other suggestions i sauteed 1/2 can of green chile, 1/2 brown onion and 1 fresh minced garlic clove. after i sauteed them pretty well i threw in a few spoonfuls of the green sauce (las palmas) and let that simmer for a bit. then added my 'saute' mix to chicken & cheese before stuffing. 3)after the inital 30min bake, before the additional cheese, i added more green sauce on top because they started to seem a bit dry. they turned out great and flavorful! will make again
