Sweet and Spicy Pork and Napa Cabbage Stir-Fry with Spicy Noodles

OMG -- this was amazing. So easy and I found a use for my leftover cabbage. After reading other reviews I anticipated it being rather sweet so I reduced the amount of chili sauce for the noodles and increased soy sauce slightly. The only other alterations I made were to use a mix of coloured peppers, fresh ginger and garlic, double the amount of chili flakes (our family likes spicy!) and added half a cup of chicken broth to the veggies when cooking -- without this I can't imagine how gooey the sauce would be after adding the cornstarch. Delish -- my fussy family of four LOVED it. We WILL be having this again! Thanks for submitting.

Pork, Broccoli and Rice Casserole

This was a fantastic "base" recipe. And I say that because I love to tinker with recipes to suit my own tastes. I found the sauce a little rich so I thinned it with some low-sodium chicken broth. I also wanted to up the vitamin factor so I threw in some diced red pepper and carrots for colour,and some sauteed chopped onion and celery, along with fresh broccoli. I also used a mix of cream of celery soup and cream of broccoli. I have topped it with buttered bread crumbs and shredded cheddar and the family LOVES this. Thanks for submitting!

Thai Green Curry Chicken

This was fantastic! I have tried MANY Thai recipes - this one delivers. After reading all reviews - I substituted Kikkoman soy sauce to saute the chicken(it is lighter and does not "stain" sauces), and omitted second amount. I also used at least DOUBLE the green curry paste and substituted agave syrup for sugar. To bring this recipe to perfection I added a healthy squeeze of lime juice during cooking and served with lime wedges when plated. Thanks for submitting - one of my new "basics".

Thai Chicken Curry with Pineapple

This is the recipe I have been searching for!! The sauce was fantastic. Yes - it makes a big difference which curry paste you use. I chose to combine a very spicy green curry paste with a less spicy red one to suit my family's taste, and sauteed them with the curry powder in a little safflower oil before adding the other ingredients. I substituted chicken breast and also added some chopped scallions with the pineapple at the end. This is an extremely easy and versatile recipe that I intend to use again and again - thanks so much for submitting!

Thai Monkfish Curry

This recipe is fabulous. I confess to tweaking EVERY recipe I try, but this one I barely altered. Added sliced cremini mushrooms, 2T white wine when adding green curry paste... and that's it. Delicious -- would give 6 stars if possible. THanks for submitting.

Curry Stand Chicken Tikka Masala Sauce

This recipe is fantastic. The only reason I gave it 4 intead of 5 stars is because I made a few substitutions. Namely - coconut milk for cream, fresh minced ginger instead of ground (added with garlic). With tomato sauce added a one chopped plum tomato for texture. Big hit with family. Will definitely make again -- thanks for this excellent submission!

Greek Lentil Soup (Fakes)

Absolutely wonderful recipe! One thing I found different was precooking the lentils slightly -- at first I thought this was a rather redundant step, but was really happy with the results. It seemed to really preserve the texture of the lentils in the soup. I ended up pureeing about 1/2 of the soup for a richer consistency and added white wine vinegar at the end. Whole family loved -- even the picky ones! Thanks for submitting.

Zesty Apricot Turkey

Fabulous. Added 2T honey dijon mustard, 1T minced ginger to ingredients and marinaded turkey for a couple of hours. Grilled turkey and boiled marinade for sauce on side --- rave reviews from guests! Thanks for excellent submission!

Naan

Fantastic - my family went nuts! I followed DakotaBear1's advice and used my breadmaker and reduced flour to 3 1/2 c. Also, I made smaller balls and just rolled 2 together. Fried in preheated cast iron pan. Looked exactly like what I had in the restaurant last week, but tasted even better. Best naan we've ever had - thanks for submitting!

Shrimp Red Thai Curry

OMG! Simply delish! Only 4 stars as I had to alter based on other reviews. I only used one can of coconut milk, garnished with sliced green onions and basil (cilantro would have been preferable, but I didn't have any) and used my own homemade red curry paste. A perfect base for a variety of uses -- thanks!

Used marinade from Grilled Talipia recipe.... liked the jalapeno pepper from this salsa recipe -- used avocado and it was pretty good, but it made the salsa a little "slimy". Didn't use tomatoes.

Chicken and Bow Tie Pasta

Made this a little lighter by whipping 1c lowfat cottage cheese, 1 Tbsp garlic, and about half of the broth in the blender as a substitute for half of the cream cheese -- delicious! Also used the suggestion of adding onion and some cajun spice mix -- whole family loved it!
