German Chocolate Cake Frosting II

I make many recipes from this site and tend to alter a bit, this time I followed this recipe exactly, BUT, I did add 1 tablespoon of corn starch. I think it kind of tastes more like vanilla pudding, the consistency is firm but I taste vanilla pudding...hmmmmm

Pesto Chicken Florentine

Gluten Free. Used 3 cups GF Penne noodles and Organic Alfredo (dry) with 1 cup of Coconut Milk and Earth Balance butter, which seem to cut down on sodium and fat. Added fresh basil on top with the tomatoes. Was good, next time will add toasted pine nuts.

Chicken Enchiladas

These are REALLY good. Was skeptical as I thought there was really nothing spectacular about the ingredients. I used corn tortillas, added some pinto beans to chicken mixture and used green enchilada sauce on top as well as some shredded jack cheese.

Orange Sauce Chicken

Yummy! Made 6 servings, still cut way back on sugar for sauce and was sweet enough. Added a bit more orange/lemon and some fresh minced ginger and a dash of Sriracha hot chili sauce. Came out great. Tenderized a chicken breast then cut into strips. Dipped into egg whites and then panko crumbs, lightly pan fried. Goes well with carrot rice recipe from this site.

Cowboy Oatmeal Cookies

Made 24 cookies. Used 1/2 cup whole wheat flour. 1/2 brown sugar and 1/4 white sugar. White choc chips. I would add more raisins and nuts next time. Maybe a little flax seed. They are good and even better next day.

Banana Banana Bread

This banana bread is the bomb! I've tried MANY recipes and this is the best. Used 1/2 whole wheat, add chopped walnuts and/or pecans. Will sometimes use 1/2 cup sugar and then squeeze agave or honey on top. Comes out great every time.

Corn Bread Mix

This is good if you don't like sweet cornbread. I love it- just basic yummy cornbread. You can probably sweeten as much as you like. I added some frozen roasted mild chilis I had in freezer, added some smoked motzarella. This goes well with tortilla soup. Thanks for great recipe!

Slow-Cooker Chicken Tortilla Soup

Added red, green, yellow bell peppers with onion, put in cuisinart to chop along with whole peeled tomatoes. Use roasted green chili that I had in freezer then just cut with scissors into thick slices. Came out great. Made with cornbread on this site. Really easy, can't go wrong.

Made exactly as--Added chicken broth to water and used brown rice. Really easy and delicious!!! Goes well with sesame chicken on this site and orange chicken, also on this site.

Orange Chicken Stir Fry

Used juice of 2 oranges, some papaya juice and the juice from mandarin oranges (is all I had). Put remainder of juice in container with flour and shake to combine then added at end with sliced celery, carrots, onions and also tenderized chicken then cut in strips added toasted whole almonds. Easy.

Asian Chicken Salad

I use the dressing and add minced fresh ginger. Add more veggies to salad, peppers, mandarin oranges. Like to use agave instead of sugar for dressing, may have to melt over stove just for a minute. Don't use the dried noodles, is fine without. Use different types of cabbage and lettuce.

Double Tomato Bruschetta

Used a variety of fresh tomatoes and fresh herbs. Grilled sourdough and a grainy bread on grill, brushed bread with OO. Skipped Motz. Can't go wrong, is great base recipe.

Parmesan Chicken

I make my bread crumbs in processor, add chives, oregano, basil, garlic and parmesan cheese, toast bread first..Tenderize chicken and then dip in egg whites...Comes out great every time!!

Baked Sesame Chicken

I added teriyaki, oyster sauce, maple syrup, minced fresh garlic and soy for sauce. Poored on when chicken just about done. Tenderized chicken, then cut in strips. Made carrot, ginger rice as recommended, turned out great!! Yummy! Used recipe from this site for a lite vinaigrette salad dressing, with fresh spinach and then threw mandarin oranges on top.

Spaghetti with White Clam Sauce

Yum! Followed directions from Sept 2008 review. I added a little less than 1/4 cup olive oil and very little butter. Added fresh parsley, basil and chopped fresh shrimp and chopped fresh clams so they wouldn't get "rubbery". I like that it's a little creamy when you add flour and cream.
