Italian Style Winter Soup

My family liked this though we did make a couple of changes. One NO heavy cream was added to the pot since my oldest has a dairy allergy. We also cut the rice in half based on the other reviews. It was still really good. I added cream to my bowl and it was even better! But it was really good even without the cream.

Cuban Green Soup

Really good! And I can't use the pepper sauce. I like the use of the greens. We will be having this again. It was even a hit with my church group. I had several ask for the recipe. I did use homemade chicken stock and drain the beans before adding. I only had one bag of turnip greens so I also used one of collard greens.

Ukrainian Sweet and Sour Cabbage Soup

Wow!! This was excellent! Even my boys liked it. The balance between tangy & sweet was spot on for me. My youngest would have liked it a little less tangy. I will be making this often. I did use beef short ribs to make my own broth and then used the meat in the soup. I also could not find apple butter so I used apple sauce and 1/8 tsp each of cinnamon and cloves. Thank you for this fabulous recipe!!

Gluten Free Blueberry Muffins

I made these as written the first time and they were very good! I have modified them to use less sugar though. I use coconut flour for the 1/2 cup GF flour so I use whole eggs (all 6), 1/2 cup coconut oil instead of butter, added GF vanilla extract, 1/2 tsp each baking soda and cream of tartar & only 1/2 cup granulated sugar. The amount of sugar was too much for my tastes. Thanks for a good recipe.

Bourbon-Glazed Ham

Grain-Free Chicken Tenders

I pan fried these after reading the other reviews. My boys really liked them and I have made them several times by request. Our family has become GF and finding a breading for chicken strips was rather challenging, but we really like this recipe.

Simple and delicious! Who could ask for more? I made exactly as written the first time. The second time I used grated a little nutmeg over the cooked apples instead of using cinnamon as I prefer it. I have made this a couple of times now and will make over and over!

Amish Slaw

Tart and slightly sweet. This is a great slaw recipe. I have made it several times. There are several people in my church group with allergies that won't allow them to have mayonnaise based slaw so this is the one I make. I add a grated carrot for color and serve with a slotted spoon since there is a lot of liquid.

Roasted Garlic Cauliflower

I made this tonight. I was looking for a recipe that I had all the ingredients for and could use up a head of cauliflower that I bought. This was delicious. I did not have the parsley, but will use next time. I cut the florets as uniformly as possible, and put them in a large bowl. I then used my garlic press to press the garlic into 3 Tbs olive oil and poured it over them. I mixed them well and then spread them in a pan to roast at 400 degrees for 25 minutes. I put the Parmesan over them and left them in the oven until it was melted and browned. My 14 yo looked at the recipe and said "gross", but after one bite he said "this is delicious!" Will make again and again! Thanks!

Brazilian Cheese Bread (Pao de Queijo)

This is wonderful! I have made it several times. It is best right out of the oven. I use butter, no garlic and twice the amount of Parmesan or Romano cheese. It ways turns out crisp and chewy.

My Chili

Bland. Chili must have cumin and I prefer a spicy chili. I salvaged it by adding more chili powder, cumin, cayenne and chopped chipotle peppers. Not a bad base, but needs more flavor.

Russian Mushroom and Potato Soup

This was so good and it was easy to do. I did make two changes, which I don't usually like to do when I review a recipe. One was I thickened the soup with potato flakes since I have to be GF and the other was I didn't have any half-n-half so I used 3/4 cup of heavy cream, which I added after turning off the heat. That said I don't think either was enough to change the flavor of the soup which was wonderful! The light dill flavor was very good. Both my sons loved it! The oldest stating that "you can make this again Mom!" He's not usually enthusiastic about potato soup.

Mujaddara Arabic Lentil Rice

I have made this several times now. I prefer to use a couple of cloves of garlic rather than garlic powder and brown basmati rice so I add a little extra water. I also caramelize one extra onion and add it in to the lentils as they are cooking sometimes. My sons both love this dish and request it. The caramelized onions really make the dish.

This was good just as written. I did not have red onion, so substituted yellow onions. The second time I made it I used a little less water and cooked it until the lentils had fallen apart. I added a couple of diced Serranos as I had an abundance of them.

Pineapple Crisp

This was very good. Not too sweet. I made two changes. I am allergic to cinnamon so I left that out and I used a cup of gluten-free baking mix instead of flour since I can't have it. It still turned out great!
